The latest selection, unveiled on Tuesday, features 15 Starred restaurants across Toronto and surrounding communities. While no new restaurants earned Stars, inspectors highlighted major chef changes at two One‑Star establishments, a surge of standout dining in Collingwood, Ont., and the Niagara region, and a widening embrace of diverse cuisines across the GTA.

Restaurants keep their Stars as new chefs take charge

Two Toronto favourites — Enigma Yorkville and Restaurant 20 Victoria — retained their One‑Star status despite significant shifts behind the pass.

Enigma Yorkville Chef Zachary Barnes, formerly of Restaurant Gordon Ramsay, Daniel and Alo, has replaced founding chef Quinton Bennett. Barnes has moved the restaurant toward ingredient‑focused simplicity while keeping its theatrical edge. Inspectors praised his lobster‑stuffed chicken ballotine and the reimagined Signature Tree, now a savoury canapé opener featuring short rib croquettes and salmon mille‑feuille.

Restaurant 20 Victoria New chef Rafael Covarrubias has infused the menu with bold, contemporary flavours rooted in his Mexican heritage. Dishes like tamale with salsa roja and snow crab and scallop with mole verde mark a departure from the restaurant’s previously restrained European style.

Ambitious cooking is booming beyond Toronto

Inspectors say some of the region’s most exciting culinary developments are happening outside the city.

The Pine (Creemore) — The One‑Star modern Chinese and East Asian restaurant has expanded with LORE in Collingwood, offering seafood‑forward Canadian cuisine with playful touches like scallop nuggets and an elevated “Holiday Shrimp Ring.”

Niagara‑on‑the‑Lake — Revé is earning attention for its “farm‑to‑fire” philosophy, cooking hyper‑local ingredients over an open flame. Standouts include Lake Erie pickerel with beets and velouté, and Beverly Creek Farm beef bavette with potato crespelle and Bordelaise.

St. Catharines — Les Incompetents and oddBird continue to delight inspectors with French‑inspired bistro fare and gourmet comfort food.

Jordan Village — RPM Bakehouse, tied to Two‑Star Pearl Morissette, transforms farm‑grown produce and heritage grains into standout pastries, breads and seasonal cakes.
