T Australia: You came here in 2017 with Bobby — how does it feel to be back sharing this experience with your whole family?
Rose Byrne: It was so beautiful to go back to the reef and share the experience with my family, especially the kids. My little one is obsessed with animals, which was the whole focus of our trip to Australia. We saw huge sea turtles — one popped its little head up, took a big breath and dived under again, and he was just done. It was magnificent. We went to the Outer Reef near Hamilton Island and the snorkelling was incredible — beautiful fish and wondrous colours of coral. Then we went to Whitehaven Beach (voted the most beautiful beach in the world!). The sand was like flour and set against this dark green scrub — you don’t see anything so rich and rugged next to a beach elsewhere.
Talk to me about The Sundays, Hamilton Island: what were your first impressions of the property? How do you feel after a few nights here?
Our experience of The Sundays has been beautiful. Everything from the textiles to the tiling and lighting — it’s incredibly chic, but not too fussy for family. It’s luxury that’s super approachable for children. The staff have been extraordinary, and [chef] Josh Niland is a genius. Those fish tacos at Catseye Pool Club? I’ll be talking about them for months.
