{"id":207806,"date":"2025-10-12T12:32:14","date_gmt":"2025-10-12T12:32:14","guid":{"rendered":"https:\/\/www.newsbeep.com\/au\/207806\/"},"modified":"2025-10-12T12:32:14","modified_gmt":"2025-10-12T12:32:14","slug":"how-long-can-you-safely-store-and-reheat-leftovers","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/au\/207806\/","title":{"rendered":"How long can you safely store and reheat leftovers?"},"content":{"rendered":"<p class=\"paragraph_paragraph__iYReA\">If you regularly cook up a big batch of food to help you get through a busy week, do you give a second thought to how you&#8217;re storing it? \u00a0<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Food scientists say how we refrigerate and freeze our cooked food (and for how long) matters for the quality, texture and of course food safety.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Here&#8217;s what they recommend when it comes to how long you can keep cooked food and make the most of your hard work.<\/p>\n<p>Food safety starts before fridge or freezer storage<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Meal prepping or cooking double batches of recipes for leftovers is a great way to save money, use up ingredients before they expire and to make a busy week that little bit easier.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Food and nutrition scientist Emma Beckett, based in Newcastle\/Awabakal, says people need to remember the golden rules of food safety before they start cooking.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;When we chill things or freeze things, we&#8217;re slowing down bacterial growth, but the bacteria that goes in, still goes in,&#8221; she says.<\/p>\n<p>&#8220;So, washing our hands and using clean containers and all those kinds of things\u2026[are important].&#8221;<img decoding=\"async\" alt=\"A woman with shoulder-length black hair, in fruit-patterned dress and pink-framed glasses, holding a bunch of leafy greens.\" class=\"Image_image__5tFYM ContentImage_image__DQ_cq\"  src=\"https:\/\/www.newsbeep.com\/au\/wp-content\/uploads\/2025\/10\/6d40176ac6bee99ea6342e1929c91ebd\" loading=\"lazy\" data-component=\"Image\" data-lazy=\"true\"\/><\/p>\n<p class=\"Typography_base__sj2RP FigureCaption_text__zDxQ5 Typography_sizeMobile12__w_FPC Typography_lineHeightMobile20___U7Vr Typography_regular__WeIG6 Typography_colourInherit__dfnUx\" data-component=\"Typography\">Emma Beckett says people should be thinking about food safety before they begin meal prep. (Supplied: Emma Beckett)<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Senaka Ranadheera is a food scientist and associate professor at the University of Melbourne in Naarm.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">He says that potentially hazardous cooked foods include cooked meat or poultry, cooked foods containing eggs, rice, pasta, sandwiches, pizzas, and sushi.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Microbes can quickly grow up to unacceptable numbers in these foods,&#8221; he says.<\/p>\n<p><a href=\"https:\/\/www.abc.net.au\/news\/2025-07-10\/three-hour-healthy-meal-prep-routine-saves-time-money\/105507220\" data-component=\"FullBleedLink\" class=\"RelatedCard_link__rsgR9 FullBleedLink_root__lTw_U interactive_focusContext__yRhc_ interactive_defaults__AKxUU FullBleedLink_showVisited__g3Xvz\" rel=\"nofollow noopener\" target=\"_blank\">How this couple perfected their meal-prep routine <\/a><\/p>\n<p class=\"Typography_base__sj2RP RelatedCard_synopsis__cFwMW Typography_sizeMobile14__u7TGe Typography_lineHeightMobile20___U7Vr Typography_regular__WeIG6 Typography_colourInherit__dfnUx\" data-component=\"Typography\">Linh Dao and David Tran say three hours of cooking every Sunday helps their whole week run smoothly.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;[Between] 5\u00b0C \u2014 60\u00b0C is the temperature danger zone which allow microbial growths.&#8221;<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Microbial growths, when ingested, can cause food poisoning.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Dr Beckett says some vulnerable people may have a lower threshold for risk.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;If they&#8217;re immunocompromised or pregnant, if they really do not want to take the chance of getting any kind of food poisoning, then they might want food to go into the freezer a lot sooner than other people.&#8221;<\/p>\n<p>How long can you keep cooked food in the fridge?<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Our experts say that before food enters the fridge, it needs to have cooled.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">When you have <a class=\"Link_link__5eL5m ScreenReaderOnly_srLinkHint__OysWz Link_showVisited__C1Fea Link_showFocus__ALyv2\" href=\"https:\/\/www.betterhealth.vic.gov.au\/health\/healthyliving\/food-safety-and-storage\" data-component=\"Link\" rel=\"nofollow noopener\" target=\"_blank\">cooked food and want to cool it<\/a>:<\/p>\n<p>Put hot food into shallow dishes or separate into smaller portions to help cool the food as quickly as possible.Don&#8217;t put very hot food into the refrigerator. (Supplied: Dr Senaka Ranadheera)<\/p>\n<p class=\"paragraph_paragraph__iYReA\">He also recommends using food-grade, airtight containers.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">If you follow this process, he says food can be stored if the fridge and eaten safely within 1-2 days for hazardous foods or 3-4 days for other cooked meals.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Reheating the food thoroughly, whether refrigerated or frozen, can also reduce the risk of food poisoning, says Dr Beckett.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Remembering to reheat well on the way out is really important for the food safety aspects.&#8221;<\/p>\n<p>How long can you keep cooked food in the freezer?<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Dr Ranadheera says if you have leftovers or are meal prepping, it is better to freeze the food on the same day.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Even during refrigeration, food quality deterioration occurs (at a lower rate than the room temperature),&#8221; he says.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Refrigeration cannot kill microorganisms, but they grow at a very low rate.&#8221;<\/p>\n<p><a href=\"https:\/\/www.abc.net.au\/news\/2024-08-06\/freezing-food-tips-what-to-avoid\/104176906\" data-component=\"FullBleedLink\" class=\"RelatedCard_link__rsgR9 FullBleedLink_root__lTw_U interactive_focusContext__yRhc_ interactive_defaults__AKxUU FullBleedLink_showVisited__g3Xvz\" rel=\"nofollow noopener\" target=\"_blank\">Can all meals be frozen?<\/a><\/p>\n<p class=\"Typography_base__sj2RP RelatedCard_synopsis__cFwMW Typography_sizeMobile14__u7TGe Typography_lineHeightMobile20___U7Vr Typography_regular__WeIG6 Typography_colourInherit__dfnUx\" data-component=\"Typography\">What to prioritise, what to avoid and the best ways to store food in your freezer.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Lydia Buchtmann, CEO of the Food Safety Information Council, recommends freezing cooked food that has been refrigerated within 24 hours.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;It&#8217;s good not to have food waste, I mean we&#8217;re all under the pump at the moment, with the cost of living,&#8221; she says.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;You could probably leave it one for lunch tomorrow, but large quantities in a big pot are really a big risk of getting all sorts of food poisoning.<\/p>\n<p>&#8220;So small containers, freeze them if you&#8217;re not going to eat them by the next day.&#8221;<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Dr Ranadheera says if properly stored, frozen cooked foods (regardless of if the dish is meat or vegetable), can keep for three to six months.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;There is not any strict guideline due to the variations [of meal types and freezer conditions],&#8221; he says.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Meals with higher fat content quality will deteriorate soon even during frozen storage.&#8221;<\/p>\n<p><img decoding=\"async\" alt=\"Someone putting a container in the freezer\" class=\"Image_image__5tFYM ContentImage_image__DQ_cq\"  src=\"https:\/\/www.newsbeep.com\/au\/wp-content\/uploads\/2025\/10\/5eba379745b8feaaa73037f6349345b4\" loading=\"lazy\" data-component=\"Image\" data-lazy=\"true\"\/><\/p>\n<p class=\"Typography_base__sj2RP FigureCaption_text__zDxQ5 Typography_sizeMobile12__w_FPC Typography_lineHeightMobile20___U7Vr Typography_regular__WeIG6 Typography_colourInherit__dfnUx\" data-component=\"Typography\">Experts recommend freezing cooked food that has been refrigerated within 24 hours. (ABC Lifestyle: Amy Sheehan)<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;If your freezer is at -18\u00b0C, quality deterioration of frozen meals will slowly start after about two weeks.
