(Supplied: Maffra and District Historical Society)<\/p>\n<p>Early hurdles<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Mr Shaw said perfecting his beet spirit involved a lot of trial and error.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;It was tough to find seed, so we imported some from Europe, grew the beets and workshopped ways to get the sugar out of them,&#8221; he said.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;We didn&#8217;t have the right equipment, so [we] had to hand-harvest all the beets.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;But we&#8217;ve finally found a process that works.&#8221;<\/p>\n<p><img decoding=\"async\" alt=\"A bunch of white vegetables known as sugar beets lie outside in a paddock.\" class=\"Image_image__5tFYM ContentImage_image__DQ_cq\"  src=\"https:\/\/www.newsbeep.com\/au\/wp-content\/uploads\/2025\/11\/cf9ed343ad88659ed8f3433a5573c1e6\" loading=\"lazy\" data-component=\"Image\" data-lazy=\"true\"\/><\/p>\n<p class=\"Typography_base__sj2RP FigureCaption_text__zDxQ5 Typography_sizeMobile12__w_FPC Typography_lineHeightMobile20___U7Vr Typography_regular__WeIG6 Typography_colourInherit__dfnUx\" data-component=\"Typography\">Sugar beets can be difficult to harvest without the right equipment. (Supplied: Ross Shaw)<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Mr Shaw is now hoping to grow his spirit side hustle.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;We&#8217;re definitely scaling up our whisky production by adding equipment and slowly perfecting our process,&#8221; Mr Shaw said.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;We&#8217;ve still got about 400 bottles each of the red wheat vodka and sugar beet spirit on the shelves.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;But we&#8217;re keen to make more if the market demands it.&#8221;<\/p>\n<p class=\"paragraph_paragraph__iYReA\">And Australian consumers are searching for new flavours, according to Mr Costello.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;The trend is people drinking less but with more variety,&#8221; he said.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;And they want to know the story behind each bottle.&#8221;<\/p>\n","protected":false},"excerpt":{"rendered":"Ross Shaw&#8217;s farm shed is brimming with glass beakers and old oak barrels.
