I also use this mix to make homemade fish cakes relatively simply, flavoured with coriander and lime or capers. I\u2019ll pair it with a big salad to balance things out. It\u2019s a stress-free option for Friday nights or when we\u2019re just not in the mood for cooking.\u201d<\/p>\n<p>Overripe bananas<\/p>\n<p>Don\u2019t just throw them out when they start to turn, even if you don\u2019t have the time to do anything with them now, <a class=\"post_in-line_link\" href=\"https:\/\/inews.co.uk\/inews-lifestyle\/food-and-drink\/make-ahead-freezer-meals-batch-lady-3535821?srsltid=AfmBOoqEsEsTaclI-Vfu3x6CGXkBGsY6jIJcjTI5zxkvruHpkNGr3Y20&amp;ico=in-line_link\" rel=\"nofollow noopener\" target=\"_blank\">freeze them<\/a> for when you do, suggests Thornton-Wood. \u201cI absolutely hate wasting food, so I\u2019ll always save these up and either make banana loaf when I have time or mix with oats, yoghurts and eggs to make a baked pudding that I serve with frozen berries for breakfast. You can chuck the overripe bananas in the freezer in their skins, then defrost in the microwave if you\u2019re in a hurry or leave to defrost on a plate.\u201d<\/p>\n<p>Frozen berries<\/p>\n<p>Next up on the shopping list, always, is frozen fruit. \u201cAgain, freezing locks in vitamins, and it\u2019s far more economical (and less wasteful) than relying on fresh fruit that spoils quickly,\u201d says Ludlam-Raine. \u201cI\u2019ll always have a shop-bought mix of strawberries, bananas and blueberries in my freezer \u2013 perfect for overnight oats, yoghurt bowls and smoothies.\u201d <\/p>\n<p>\u201cFrozen berries are so much cheaper than fresh,\u201d agrees Thornton-Wood. \u201cThey are full of fibre, vitamins and antioxidants. We\u2019ll often have them with fish, omelettes or alongside a big veggie-packed meal.\u201d<\/p>\n<p>Ginger <\/p>\n<p>Soothing on the digestive system, with antioxidant and anti-inflammatory properties, ginger is a spice that Tew always has on hand to grate into curries and stir-fries. \u201cI buy root ginger fresh and then freeze it with the skin on. Then when we need some, I grate it from frozen and put the rest back in the freezer.\u201d<\/p>\n<p>Homemade stock<\/p>\n<p>Making your own is relatively simple and means you won\u2019t have to rely on shop-bought stock cubes (which can contain high amounts of salt). It\u2019s also a great way to put your post-roast chicken carcass to good use. \u201cI use the chicken bones to make stock and freeze it for soups, casseroles and risotto. I cook the bones with bay leaves and vegetable peelings \u2013 either simmer in a saucepan for a couple of hours or I pressure cook it.\u201d<\/p>\n<p>Homemade cakes and flapjacks<\/p>\n<p>An easy swap to reduce reliance on shop-bought sugary sweet treats, plus they taste far better homemade. \u201cI batch bake cakes and flapjacks for the children\u2019s lunchboxes. We bake fresh on Sundays but then get a freezer batch out mid-week,\u201d says Tew. \u201cBanana muffins, pumpkin and choc chip cakes are favourites. A handy tip for packing in a few extra veggies is to grate courgette into banana cakes and I use pumpkin puree in my muffins. Mix together with two mashed bananas and bake at Gas Mark 5\/200C for 20 minutes.<\/p>\n<p>Sourdough<\/p>\n<p>Another one to bake fresh, then freeze. \u201cI <a class=\"post_in-line_link\" href=\"https:\/\/inews.co.uk\/inews-lifestyle\/bread-22-pounds-really-worth-it-claims-improve-health-2546573?srsltid=AfmBOooYaO7pN-HGJscIEzuzqN21KL4NHkfpmBzDDM2xypUKwwfYZ4pi&amp;ico=in-line_link\" rel=\"nofollow noopener\" target=\"_blank\">make sourdough<\/a> once a week and freeze it in portions to take out for toast, as snacks for the family and to accompany soup,\u201d says Thornton-Wood. \u201cSourdough is a fermented food and is good for gut health \u2013 I always add seeds, too, for additional fibre.\u201d<\/p>\n<p>And if you don\u2019t have time to bake your own, freezing freshly bought sourdough can ensure it doesn\u2019t go stale in your bread bin.<\/p>\n<p>Leftovers <\/p>\n<p>\u201cMy mantra is \u2018cook once, eat twice,\u2019\u201d says Ludlam-Raine. \u201c<a class=\"post_in-line_link\" href=\"https:\/\/inews.co.uk\/inews-lifestyle\/6-foods-healthier-cheaper-when-frozen-3869876?srsltid=AfmBOoqxjY3lePCsrHPLiGLazEG6kfUe59sIqeeOcF7Tc70L210AZ2Kl&amp;ico=in-line_link\" rel=\"nofollow noopener\" target=\"_blank\">I freeze<\/a> the extra portions of family meals that I make for busy evenings. Leftovers like curries, bolognese, soups and pasta dishes freeze brilliantly, and as a bonus, the chilling and reheating process increases resistant starch, which is great for<a class=\"post_in-line_link\" href=\"https:\/\/inews.co.uk\/inews-lifestyle\/gut-health-expert-lunch-every-day-4099002?srsltid=AfmBOooxN6t6p8tPqn3XY51Ax19vfT7seDsDXJUVX89uqIkubRs541kR&amp;ico=in-line_link\" rel=\"nofollow noopener\" target=\"_blank\"> gut health<\/a>. It makes healthy choices easy when time is tight.\u201d<\/p>\n<p>Tew adopts a similar strategy for her family meal prep. \u201cI usually always have a bolognaise mix in the freezer that I can quickly turn into a cottage pie or lasagne. I serve them with peas and baked beans for a balanced, family-friendly meal that takes minutes on the hob and in the air-fryer.\u201d<\/p>\n<p>A packet of fish fingers is always in Thornton-Wood\u2019s freezer too, \u201cthey\u2019re my standby food for busy days. Yes, they technically count as ultra-processed food, but that doesn\u2019t mean they cannot be eaten \u2014 it\u2019s all about balance. They are a source of protein and often have added <a class=\"post_in-line_link\" href=\"https:\/\/inews.co.uk\/inews-lifestyle\/getting-enough-omega-3-why-matters-how-fix-4000904?srsltid=AfmBOope85PyNcvXWsfsaSO9hqQcHvJgQlt1VnKL0PkSlay4AA5zTMlK&amp;ico=in-line_link\" rel=\"nofollow noopener\" target=\"_blank\">Omega-3<\/a>. I use them for a quick dinner with some mashed potatoes and steamed veg (often from the freezer).
