(Supplied: Jason Ryan)<\/p>\n<p>What&#8217;s on the menu?<\/p>\n<p class=\"paragraph_paragraph__iYReA\">Among the dishes Aboud is now cooking are a Lebanese-inspired corned beef, veal schnitzel and a chuck roll using meat usually processed into mince.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">He said he also was discovering unusual cuts that customers were loving.<\/p>\n<p class=\"paragraph_paragraph__iYReA\">&#8220;Finding things like a Sierra steak in the shoulder muscle,\u00a0which is a really long flank-looking steak that grills up beautifully and would usually get\u00a0trimmed out and tossed to the side.\u00a0<\/p>\n<p>&#8220;We&#8217;ve put all these things on the menu; people have been literally eating it up.
