The chef, better known as \u201cHuey\u201d, is without his signature suspenders, an item that keeps him recognisable, like Bob Denver of Gilligan\u2019s Island\u2019s bucket hat and red pyjama shirt, Hewitson mentions. \u201cI only wear braces for film,\u201d he explains (though they\u2019re in his bag in the event that someone asks him to put them on).\u00a0<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">But we\u2019re here to talk about restaurants, damn it. Specifically, Clichy, the Collingwood fine diner he co-founded in 1977 with <a target=\"_blank\" class=\"inline cursor-pointer border-b border-current pb-0 transition duration-100 hover:border-dotted\" href=\"https:\/\/www.smh.com.au\/entertainment\/art-and-design\/montsalvat-s-sigmund-jorgensen-dies-aged-79-20190722-p529l4.html\" rel=\"nofollow noopener noreferrer\">Sigmund Jorgensen<\/a>, a food critic best known for his involvement in the Montsalvat artist community. Clichy closed in 1982, but Hewitson and the team from Carlton restaurant <a target=\"_blank\" class=\"inline cursor-pointer border-b border-current pb-0 transition duration-100 hover:border-dotted\" href=\"https:\/\/www.broadsheet.com.au\/melbourne\/carlton\/restaurants\/bistra\" rel=\"nofollow noopener\">Bistra<\/a> will bring it back to life for four nights, from Monday March 23 to Thursday March 26, as part of the Melbourne Food &amp; Wine Festival.<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">Emblazoned at the front of the original Clichy was the tagline, \u201coriginal food in the French manner\u201d. It wasn\u2019t a traditional French restaurant; instead, the team used Australian ingredients, French techniques and had a looseness around what they served. One time, Hewitson even put on marinated tuna with a Thai-style slaw inspired by <a target=\"_blank\" class=\"inline cursor-pointer border-b border-current pb-0 transition duration-100 hover:border-dotted\" href=\"https:\/\/en.wikipedia.org\/wiki\/Mogens_Bay_Esbensen\" rel=\"nofollow noopener noreferrer\">Mogens Bay Esbensen,<\/a> a Danish-born Sydney-based chef who was known for Thai cooking. \u201cBut it didn\u2019t work,\u201d says Hewitson of the Southeast Asian addition. \u201cWas far too ahead of its time.\u201d<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">At the reborn Clichy, dishes will come back with \u201ca bit of poetic licence\u201d. He\u2019s not jumping into the kitchen, but has handed over his recipes to Bistra chef Alex Nishizawa. A four-course menu will have less offal than Clichy of the past \u2013 \u201cAustralians in those days ate lots of offal\u201d \u2013 but there will be a chocolate and nut gateaux he says ex-staff and customers always request.<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">The event coincides with the release of Hewitson\u2019s memoir, Who Called the Cook a Bastard?, which details his time from folk singer to chef, and eventually television personality. The self-published title is a collaboration between Hewitson, his wife Ruth Krawat and Melbourne design collective <a target=\"_blank\" class=\"inline cursor-pointer border-b border-current pb-0 transition duration-100 hover:border-dotted\" href=\"https:\/\/www.tcyk.com.au\/\" rel=\"nofollow noopener noreferrer\">TCYK<\/a>.<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">TCYK designed the book and is managing the print run. It also connected Hewitson with Bistra. The restaurant\u2019s two dining rooms will be transformed with two-storey-high fabric sculptures that are a palimpsest of Clichy and Bistra content.\u00a0<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">A generation of people who grew up watching Hewitson on television may know very little about his day as a restaurant chef. Over his career, Hewitson owned more than 10 restaurants, including Tolarno Bar &amp; Bistro in St Kilda, Big Huey\u2019s Diner in South Melbourne, and Fleurie in Toorak.\u00a0<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">Clichy was the first spot he was part of from day one. \u201cThey were lovely times. Why they were so good was, it was the days that being in the restaurant business was a bit of fun. It wasn\u2019t all about, \u2018Jesus, it\u2019s going to be tough to make a buck\u2019. It was easier. And the [front-of-house] staff were interested, but they were not talking like, \u2018this is going to be my career for the rest of my life\u2019. It was a very interesting, very different era.\u201d<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">The event is a fun return to restaurants for Hewitson, who stepped away from television in 2019. \u201cTowards the end, television got to the stage where we were doing five recipes every day, and there was no fun in it.\u201d But his daughter suggested he get online. \u201cShe came to me and said to do it, but she said, \u2018no one will know you, dad, because it\u2019s a young persons\u2019 site\u2019. Instantly we had all these people who said things like, \u2018we thought you were dead\u2019. I got lots of those.\u201d<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">But he\u2019s nonplussed, and happy to be finding joy in front of the camera again. \u201cIt\u2019s like back to the old days of television \u2013 warts and all and a bit of fun.\u201d<\/p>\n<p class=\"mb-4 font-serif text-[20px] leading-[1.75rem]\">Clichy will be reborn at Bistra in Carlton from Monday March 23 to Thursday March 26. <a target=\"_blank\" class=\"inline cursor-pointer border-b border-current pb-0 transition duration-100 hover:border-dotted\" href=\"https:\/\/www.melbournefoodandwine.com.au\/events\/clichy-original-food-in-the-french-manner\/\" rel=\"nofollow noopener noreferrer\">Bookings essential<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"When Broadsheet meets Iain Hewitson at Bistra on a Friday morning, one thing is noticeably missing.
