Many of humanity\u2019s most important crops \u2014 including wheat, potatoes, beans \u2014 contain fewer vitamins and minerals than they did a generation ago.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"6MJ585K3NH0199BV80CJYPK0B8\" data-contentid=\"6MJ585K3NH0199BV80CJYPK0B8\">The invisible culprit behind this damaging phenomenon? Carbon dioxide pollution.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"INCFT2Q54FB5BDQSOXRY3HZ3NE\" data-contentid=\"INCFT2Q54FB5BDQSOXRY3HZ3NE\">Surging concentrations of carbon in the atmosphere, caused largely by burning fossil fuels, have produced potent changes in the way plants grow \u2014 from increasing their sugar content to depleting essential nutrients like zinc. But for the world\u2019s poorest and most vulnerable, the consequences could be devastating.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"QJ4ZHWLR2ZEGLE7B53UPB44SRA\" data-contentid=\"QJ4ZHWLR2ZEGLE7B53UPB44SRA\"><a href=\"https:\/\/www.nature.com\/articles\/s41558-018-0253-3?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">One study<\/a> concluded that by the middle of the century the phenomenon could put more than a billion additional women and children at risk of iron-deficiency anemia \u2014 a condition that can cause pregnancy complications, developmental problems and even death. A <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/gcb.70568?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">sweeping survey<\/a> of changes among 32 compounds in 43 crops found that nearly every plant that humans eat is harmed by rising CO2 levels.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"KHQGG2F4XT5A90UPMZ0GN9RP90\" data-contentid=\"KHQGG2F4XT5A90UPMZ0GN9RP90\">\u201cAs a scientist, it\u2019s really interesting,\u201d said Sterre F. ter Haar, an environmental scientist at Leiden University in the Netherlands and lead author of the survey, published in November. \u201cAs a person \u2026 you don\u2019t want to see such a shift, because it\u2019s so negative.\u201d<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"B5HFYQVZ0T37X4D328UPHAHFUR\" data-contentid=\"B5HFYQVZ0T37X4D328UPHAHFUR\">For the past several years, ter Haar and her colleagues have worked to compile a database of all existing research on nutrient changes linked to rising CO2. They tracked down hundreds of studies, ranging from tightly controlled lab experiments to sprawling global analyses of real-world crops.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"YWL3HEZIY5AZBAVH7QA6SSWMHM\" data-contentid=\"YWL3HEZIY5AZBAVH7QA6SSWMHM\">Next the team used their dataset to calculate the nutritional densities of each crop under different carbon dioxide levels \u2014 and to predict how their composition could continue to shift in the future.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"X3NYPXDUA9447FXDDM2W03KUUM\" data-contentid=\"X3NYPXDUA9447FXDDM2W03KUUM\">On average, they found, nutrients have already decreased by an average 3.2 percent across all plants since the late 1980s, when the concentration of carbon dioxide in the atmosphere was about 350 parts per million.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"FDTQHOBC7ZE3RLQNR34PW3SSOA\" data-contentid=\"FDTQHOBC7ZE3RLQNR34PW3SSOA\">That figure may seem small, ter Haar said, but with so much of the world already living on the brink of nutrient insufficiency, a drop of just a few percentage points has the potential to push millions of additional people into a health crisis.<\/p>\n<p class=\"bold ma-auto pr-sm pl-sm pb-md center font-sm\">Projected change in nutrient concentration by food, from 1988 to 2040<\/p>\n<p>Source: Leiden University meta-analysis of crop nutrient changes<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"ZR3HTY90G15DNB9BZCRHNTWJWM\" data-contentid=\"ZR3HTY90G15DNB9BZCRHNTWJWM\">Researchers are still trying to understand the exact causes of this change.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"ZZR4PNWB4VC53FHKM34DTL5VB4\" data-contentid=\"ZZR4PNWB4VC53FHKM34DTL5VB4\">One of the primary theories is related to the fact that extra carbon dioxide helps plants produce more carbohydrates \u2014 like the cellulose in leaves and stems, and the starch that\u2019s found in grains.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"NM4G2VH3YZGQRPJ5X5TJK3H6CQ\" data-contentid=\"NM4G2VH3YZGQRPJ5X5TJK3H6CQ\">Those who oppose efforts to reduce carbon emissions frequently cite this effect to justify burning fossil fuels, ter Haar noted, arguing that carbon dioxide is \u201cplant food.\u201d But without a corresponding increase in mineral uptake, plants aren\u2019t able to produce more of the proteins, acids and other molecules that make them nutritious.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"QKUQI4ATUVCGNMK3XHGS6K33ZY\" data-contentid=\"QKUQI4ATUVCGNMK3XHGS6K33ZY\">The result is that crops have the potential to grow bigger and faster and produce higher yields, but each bite of food will have more sugar and fewer nutrients than before.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"D8DWMU9BPN55XCW76NNKUZVRB0\" data-contentid=\"D8DWMU9BPN55XCW76NNKUZVRB0\">This \u201cdilution effect\u201d is probably not the only factor at play, said Lewis Ziska, a plant biologist at Columbia University who conducted pioneering work on the issue during more than two decades at the U.S. Department of Agriculture.<\/p>\n<p><img alt=\"\" loading=\"lazy\" width=\"3264\" height=\"2448\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent\"  src=\"https:\/\/www.newsbeep.com\/au\/wp-content\/uploads\/2026\/04\/KQSP5V3SOLMFLQVDZLHAW7OXKQ.jpg&#038;high_res=true&#038;w=2048.webp\"\/>Stomata, the tiny pores on leaves that allow plants to take in carbon dioxide, are seen on a wheat plant, magnified to nearly 60 times their actual size and stained for visibility. If they are getting more carbon with each breath, they don\u2019t need to open their stomata as often, which conserves moisture.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"CH53UH9VYH26T1TGVXK94MTZXC\" data-contentid=\"CH53UH9VYH26T1TGVXK94MTZXC\">That means the plant will take up less water through its roots \u2014 and lose out on any minerals that are dissolved in that water.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"FHC7566CZD1W7C9QFTMVDJE5TC\" data-contentid=\"FHC7566CZD1W7C9QFTMVDJE5TC\">\u201cThe plant is becoming more efficient, but it\u2019s occurring at a price, from a human perspective,\u201d Ziska said.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"XWJKC9X33154D0FCUPH13FUWFC\" data-contentid=\"XWJKC9X33154D0FCUPH13FUWFC\">Climate change can also alter how minerals move through the soil, <a href=\"https:\/\/www.nature.com\/articles\/s41558-025-02470-3?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">research shows<\/a>, affecting plants\u2019 ability to absorb them. Microbes energized by warmer conditions may gobble up all available nitrogen, depriving plants of an element required to build proteins. At the same time, higher temperatures can<a href=\"https:\/\/acsess.onlinelibrary.wiley.com\/doi\/full\/10.2134\/ael2017.02.0006?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\"> increase the solubility of arsenic in water<\/a>, causing a few crops, such as rice, to take up more of the toxic heavy metal.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"CPJAQYZBPBH3PL7SWZXUCGUXB4\" data-contentid=\"CPJAQYZBPBH3PL7SWZXUCGUXB4\">The degree of nutrient dilution varies widely between species. Between 1988 and 2040, zinc concentrations are projected to decline almost 40 percent in chickpeas but will barely change in other beans. Meanwhile, calcium concentrations are expected to rise in rice even as the nutrient dwindles from other crops.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"E76RKF6V4H5HX3NTBJCQW6V378\" data-contentid=\"E76RKF6V4H5HX3NTBJCQW6V378\">\u201cWe hope this paper might be a helpful puzzle piece in saying, \u2018Hey, we are seeing a shift, it is significant, and maybe we should take this seriously and figure out what\u2019s happening to our food,\u201d ter Haar said.<\/p>\n<p>A growing threat to human health<img alt=\"\" loading=\"lazy\" width=\"3600\" height=\"2395\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent\"  src=\"https:\/\/www.newsbeep.com\/au\/wp-content\/uploads\/2026\/04\/WWQNBDV6UQA3CORZ4O3QZCGXV4.jpg&#038;high_res=true&#038;w=2048.jpeg\"\/>A severely malnourished boy sleeps against his mother in an inpatient therapeutic feeding center in northeastern Nigeria. But when Nike Bello\u2019s patients show up at the hospital to give birth, many of them don\u2019t know they are anemic.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"SBGKET4JGZCQVDGJ77SF2XJAY4\" data-contentid=\"SBGKET4JGZCQVDGJ77SF2XJAY4\">The danger becomes apparent once they are in labor and begin losing blood, said Bello, a professor of obstetrics and gynecology at the University of Ibadan who conducts research on preventing postpartum hemorrhage.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"4OLRPSXE5RCRHNUCGUW4XPHV2Q\" data-contentid=\"4OLRPSXE5RCRHNUCGUW4XPHV2Q\">Because anemic women have fewer red blood cells \u2014 the iron-rich cells that transport oxygen throughout the body \u2014 the ordinary bleeding of childbirth can deprive their organs of oxygen and eventually trigger heart failure.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"OBG5RV2J7FD5HDJBBSVZ7NVYRM\" data-contentid=\"OBG5RV2J7FD5HDJBBSVZ7NVYRM\">For tens of thousands of Nigerian women each year, the consequences are fatal.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"N567VV5ET123TD8NKB3Y90GZE4\" data-contentid=\"N567VV5ET123TD8NKB3Y90GZE4\">It\u2019s difficult to determine how much carbon emissions will affect rates of anemia and other nutrient deficiencies, said public health professor Samuel Myers, because experts don\u2019t know exactly how many people already suffer from these conditions worldwide. One recent <a href=\"https:\/\/www.thelancet.com\/journals\/langlo\/article\/PIIS2214-109X(24)00276-6\/fulltext?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">study<\/a> in the Lancet Global Health journal estimated over half the global population doesn\u2019t get enough vitamins and minerals. The World Health Organization puts the number closer to 30 percent.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"HRUV7GY7H56XZ4RPAR1KP2UEWG\" data-contentid=\"HRUV7GY7H56XZ4RPAR1KP2UEWG\">Either figure is much higher than the number of people who regularly don\u2019t get enough to eat, said Myers, who directs the Johns Hopkins Institute for Planetary Health. And the consequences can be just as perilous.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"P4ZUBUKQRZGFXGCJ6DCA7AQW34\" data-contentid=\"P4ZUBUKQRZGFXGCJ6DCA7AQW34\">Immune system problems linked to zinc deficiency are thought to cause nearly <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25825293\/?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">half a million excess child deaths<\/a> each year from illnesses that are usually treatable, such as diarrhea and pneumonia. Women with severe anemia are seven times more likely to experience life-threatening bleeding during labor, according to a <a href=\"https:\/\/www.lshtm.ac.uk\/newsevents\/news\/2023\/severe-anaemia-linked-seven-fold-increased-risk-death-or-life-threatening?itid=lk_inline_enhanced-template#:~:text=Severe%20bleeding%20after%20birth%2C%20known,consider%20different%20severities%20of%20anaemia.\" rel=\"nofollow noopener\" target=\"_blank\">clinical study<\/a> of more than 10,000 pregnancies, and their babies are <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC11330297\/?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">more likely to suffer health problems<\/a> or die soon after birth.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"GJVP372V4BAQBPY2X3U4LZADDM\" data-contentid=\"GJVP372V4BAQBPY2X3U4LZADDM\">These deaths could be easily avoided if patients had better access to health care and good nutrition, said Benjamin Black, an obstetrician and specialist adviser for Doctors Without Borders.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"V6H8GUT0TX39B2EQ14AM0EK064\" data-contentid=\"V6H8GUT0TX39B2EQ14AM0EK064\">In a <a href=\"https:\/\/www.nature.com\/articles\/s41558-018-0253-3?itid=lk_inline_enhanced-template\" rel=\"nofollow noopener\" target=\"_blank\">2018 study in the journal Nature Climate Change<\/a>, Myers and his colleague Matthew Smith examined the diets of people from more than 150 countries to figure out how carbon dioxide pollution will affect nutrient deficiency rates.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"FPXG2402N5179FV5N609EJT5A0\" data-contentid=\"FPXG2402N5179FV5N609EJT5A0\">By 2050, they found, an additional 175\u2009million people could experience health problems from a lack of zinc and another 122 million could find themselves newly protein-deficient. Eating more meat can make up for missing iron, zinc and protein in plant foods. Supplements can compensate for any nutrients people aren\u2019t getting from produce. Fortified breads and cereals containing extra vitamins and minerals can be found at any grocery store.<\/p>\n<p data-component=\"Text\" class=\"wpds-c-foYyTm wpds-c-foYyTm-idAgRsb-css component-text\" id=\"OTF4ZIUWJJGU7HJH5P26XPV6GI\" data-contentid=\"OTF4ZIUWJJGU7HJH5P26XPV6GI\">But in low-income regions, most people depend on a few cheap staples such as wheat and rice to provide more than half their calories.
