Image Credit: Andy Sacks\/Getty ImagesA recent study has found that it may not just be what\u2019s in ultra-processed foods that makes them unhealthy, but how they\u2019re made. The study noted that factors such as changes in the food\u2019s cellular structure, loss of beneficial chemical compounds, and additives and chemicals in packaging may all pose health risks. This adds to previous research that shows that ultra-processed foods can negatively affect health.<\/p>\n<p>Public concern over the effects of ultra-processed foods has been growing. Research has increasingly associated these foods with a higher risk of conditions like <a href=\"https:\/\/www.healthline.com\/health-news\/ultra-processed-foods-heart-disease-healthy-swaps\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">heart disease<\/a>, <a href=\"https:\/\/www.healthline.com\/health-news\/ultra-processed-foods-and-diabetes-3-things-to-know-about-diet-and-risk\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">diabetes<\/a>, <a href=\"https:\/\/www.healthline.com\/health-news\/ultraprocessed-foods-obesity-chronic-disease-risk\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">obesity<\/a>, and even <a href=\"https:\/\/www.healthline.com\/health-news\/can-ultra-processed-foods-increase-mortality-risk-what-we-know\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">early death<\/a>. <\/p>\n<p>Despite these concerns, ultra-processed foods make up <a href=\"https:\/\/www.cdc.gov\/nchs\/products\/databriefs\/db536.htm\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" class=\"content-link css-kxhged\">around 55%<\/a> of the American diet. <\/p>\n<p>\u201cUPFs [ultra-processed foods] do offer some advantages, but at the expense of the consumer\u2019s health. They are convenient, affordable, have a long shelf life, and are often engineered to be highly palatable, which contributes to their widespread consumption,\u201d said <a href=\"https:\/\/www.memorialcare.org\/providers\/mir-b-ali\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" class=\"content-link css-kxhged\">Mir Ali<\/a>, MD, medical director of MemorialCare Surgical Weight Loss Center at Orange Coast Medical Center in Fountain Valley, CA. Ali was not involved in the study. <\/p>\n<p>\u201cBecause of these factors, UPFs are extremely prevalent in the modern diet. While many people are generally aware that these foods are not optimal for health, convenience and taste often drive decision making,\u201d he told Healthline. <\/p>\n<p>Experts are also still looking into exactly what drives the risks from ultra-processed foods. They are debating whether it is the nutritional quality of the foods, as they are often high in sodium, added sugars, and refined grains, or if it is the industrial processing and additives used to make them. <\/p>\n<p>A recent study published in the <a href=\"https:\/\/ajph.aphapublications.org\/doi\/epdf\/10.2105\/AJPH.2026.308499\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" class=\"content-link css-kxhged\">American Journal of Public Health (AJPH)<\/a> suggests that processing may actually play an independent role in the health risks posed by ultra-processed foods. The researchers found that people who ate more ultra-processed foods had worse health outcomes. This was evident even after accounting for the overall nutritional values of the foods.<\/p>\n<p>The researchers evaluated the associations both with and without adjusting for the nutritional quality of the ultra-processed foods. <\/p>\n<p>The research team used a standard classification system to group foods according to how they were prepared. These groups ranged from minimally processed foods like fruits and vegetables to ultra-processed foods, which are made with industrial ingredients and additives that are not typically used in cooking. <\/p>\n<p>They also rated the nutritional quality of foods by scoring them based on their overall healthfulness. Each participant also received an overall diet quality score based on the foods they reported eating. <\/p>\n<p>The researchers examined how the consumption of ultra-processed foods was linked to current health measures, such as blood sugar, weight, and cholesterol, as well as long-term risk of death. <\/p>\n<p>The study showed that for every 10% increase in calories from ultra-processed foods, individuals had worse health markers. Those who ate larger amounts of ultra-processed foods tended to have: <\/p>\n<p>higher body weight lower blood sugar management higher <a href=\"https:\/\/www.healthline.com\/health\/blood-pressure-chart\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">blood pressure<\/a>worse cholesterol levels<\/p>\n<p>These individuals were also more likely to have conditions, such as <a href=\"https:\/\/www.healthline.com\/health\/diabetes\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">diabetes<\/a>, <a href=\"https:\/\/www.healthline.com\/health\/metabolic-syndrome\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">metabolic syndrome<\/a>, and <a href=\"https:\/\/www.healthline.com\/health\/cancer\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">cancer<\/a>. They also had a higher risk of dying during the study period. <\/p>\n<p>These connections remained even after accounting for the food\u2019s nutrient quality, as well as the amount of <a href=\"https:\/\/www.healthline.com\/nutrition\/saturated-fat\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">saturated fat<\/a>, <a href=\"https:\/\/www.healthline.com\/health\/food-nutrition\/added-sugar-natural-sugar-guide\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">added sugars<\/a>, and <a href=\"https:\/\/www.healthline.com\/nutrition\/salt-good-or-bad\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">sodium<\/a> in the ultra-processed foods. The patterns remained largely the same across subgroups of individuals. <\/p>\n<p>\u201cOverall, these findings reinforce existing concerns about ultra-processed foods. While awareness of their risks is relatively high, making consistent, healthier choices can be difficult \u2014 particularly when cost, convenience, and availability are limiting factors,\u201d said Ali.<\/p>\n<p>Ultra-processed foods can contribute to the development of various health conditions. <\/p>\n<p>\u201cNumerous <a href=\"https:\/\/www.bmj.com\/content\/384\/bmj-2023-077310\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" class=\"content-link css-kxhged\">health studies<\/a> have linked ultra-processed foods to a wide range of problems, including diabetes, <a href=\"https:\/\/www.healthline.com\/health\/high-blood-pressure-hypertension\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">hypertension<\/a>, <a href=\"https:\/\/www.healthline.com\/health\/obesity\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">obesity<\/a>, and <a href=\"https:\/\/www.healthline.com\/health\/hyperlipidemia\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">hyperlipidemia<\/a>,\u201d said <a href=\"https:\/\/www.memorialcare.org\/providers\/cheng-han-chen\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" class=\"content-link css-kxhged\">Cheng-Han Chen<\/a>, MD, medical director of the Structural Heart Program at MemorialCare Saddleback Medical Center in Laguna Hills, CA. Chen wasn\u2019t involved in the study. <\/p>\n<p>\u201cThese conditions can lead to serious adverse health outcomes, as they are known to be risk factors for cardiovascular diseases such as <a href=\"https:\/\/www.healthline.com\/health\/heart-attack\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">heart attack<\/a> and <a href=\"https:\/\/www.healthline.com\/health\/stroke\" class=\"content-link css-kxhged\" rel=\"nofollow noopener\" target=\"_blank\">stroke<\/a>.
