{"id":741346,"date":"2026-06-17T01:40:12","date_gmt":"2026-06-17T01:40:12","guid":{"rendered":"https:\/\/www.newsbeep.com\/au\/741346\/"},"modified":"2026-06-17T01:40:12","modified_gmt":"2026-06-17T01:40:12","slug":"upcycling-cauliflower-waste-into-protein-ingredients-for-future-food","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/au\/741346\/","title":{"rendered":"Upcycling cauliflower waste into protein ingredients for future food"},"content":{"rendered":"<p><img alt=\"Upcycling cauliflower waste into protein ingredients for future food\" class=\"lazyload img-thumbnail img-right\" data-original=\"https:\/\/d1v1e13ebw3o15.cloudfront.net\/data\/93524\/pool_and_spa_master\/..jpg\" title=\"Upcycling cauliflower waste into protein ingredients for future food\"\/><\/p>\n<p>An RMIT innovation uses ultrasound to extract leaf protein from discarded cauliflower leaves, identifying a potential new use for vegetable scraps.<\/p>\n<p>The process could help food manufacturers turn vegetable waste into protein ingredients, reducing waste and adding value to existing crops.<\/p>\n<p>The early-stage research found that high-power ultrasound increased dry matter yield and improved protein recovery from the leaves, while different processing settings changed the final concentrate\u2019s particle size, colour, solubility and structure.<\/p>\n<p>Cauliflower leaves are abundant but often discarded during processing, despite containing protein and dietary fibre.
