The new Como Ultramar will feature cooking over live charcoal.
A new restaurant is coming to Vancouver’s Fraserhood, and it’s straight fire.
The owners of Como Taperia (styled ¿CóMO? Taperia) are opening a new location at 592 E Broadway that will focus on seafood and cooking over live charcoal.
Como Ultramar is set to open this winter, and is inspired by founders Shaun Layton and Frankie Harrington’s annual trips to Northern Spain, according to a press release.
Food at the new restaurant will be inspired by the seaside towns of Basque Country, Cantabria and Galicia — but also the “old-school” seafood bars of Madrid and more modern dining in Barcelona, Layton says.
‘Think whole fish over fire,’ says Como Ultramar co-founder
“In all these places, there is just big love for seafood in its simplest forms, but yet, full of flavour,” he says. “Think whole fish over fire, Basque-style, with the best seafood we can source locally and from afar.”
To run the kitchen, chef-partner Daniel Kim is joining the team. A veteran of Vancouver’s fine dining scene, Kim spent nearly a decade at Boulevard, where he most recently served as chef de cuisine.
Located on Faber Block, the building was constructed in 1926 and formerly known as the Carolina. Previous tenants include Black & White Grocery and Seb’s Cafe, according to the release.
The 2,500-square-foot space will feature a dining room and a mezzanine on the second floor.
