Zumi will deliver sushi by cedar conveyor belt.
A new sushi restaurant is getting ready to move into the new Alberni tower in Vancouver’s West End.
Zumi Revolving Sushi Bar expects to open in the winter at 1588 Alberni St., according to its website, which also notes it’ll be the “first revolving sushi bar” in Vancouver.
Also known as kaiten, revolving sushi bars don’t revolve like the Top of Vancouver restaurant. Instead, the sushi will be delivered via a cedar conveyor belt system. The system is different from the sushi train system at Sushi Aboard, which tells Vancouver Is Awesome it isn’t involved with Zumi.
“Kengo Kuma drew the tower above us; we kept his logic downstairs. Wood you want to touch, light that stays low, and a belt that moves at the pace of a slow walk,” reads Zumi’s website.
The belt will offer seasonal plates, and people will pay by the plate. Items listed for the belt include hamachi, maguro and uni, running between $5 and $8 per plate.
“The belt is the shortest path from the cutting board to your chopsticks. Each plate leaves the chef’s hands and reaches your seat in under a minute, so nothing sits under glass and nothing waits for a ticket,” reads the website.
There will also be a cedar counter in front of the chefs, offering options which aren’t on the belt.
Zumi will have to-go options as well.
