Limbo
On paper, Limbo is yet another neo-bistro in a city of countless French restaurants. And yet it’s also one of the most interesting new restaurants in Montreal. Here, what’s old is new again as chefs Harrison Shewchuk and Cédric Larocque draw from the deepest recesses of the French culinary canon to create decadent dishes that capture all the romance and sophistication of French cooking. Pintades get deboned, stuffed with foie blonde and roasted to perfection, beautiful beef filet is gently poached in broth and served with buttered turnips, and purslane and raw Nova Scotia scallops sit atop gently simmered potatoes bathed in a jet-black sauce. The wine list by Henri Murray (Pichai) is well composed, and the rotating slushie cocktail is always worth discovering. (45 Mozart W.)
