For a time, they ran both spaces, but then, in March 2025, they sold Cafe Mosaics.<\/p>\n<p>A lot changed with plant-based trends, restaurants and even the world in those years. Plant-based diets, hailed as the future of food due to their gentler impact on the environment, have continued to find a niche, but on a smaller scale. Cost of living increases has changed the way people spend money.\u00a0\u00a0But through all of that, there has been a loyal customer base in the city.<\/p>\n<p>\u201cWe\u2019re just taking it one day at a time until it closes,\u201d Wales says. \u201cWe\u2019ll make peace with that then figure out what to do.\u201d<\/p>\n<p>The Moth remains open, likely until the end of the year.<\/p>\n<p>The Moth<br \/>Boyle Street | 9449 Jasper Ave, Edmonton | 780.244.9702 | <a href=\"http:\/\/mosaicsandmotharchive.com\/themothcafe\/\" target=\"_blank\" rel=\"noopener nofollow\">themothcafe.com<\/a><\/p>\n<p>Wales\u2019 Vegetarian Restaurant Picks<\/p>\n<p>She might be saying goodbye to her plant-based restaurant, but there are still staples of <a href=\"https:\/\/edifyedmonton.com\/food\/best-restaurants\/2025\/best-vegetarian-6\/\" rel=\"nofollow noopener\" target=\"_blank\">vegan and vegetarian food<\/a> in the city that Wales loves.<\/p>\n<p>An Chay<\/p>\n<p>This Vietnamese vegetarian restaurant has <a href=\"https:\/\/edifyedmonton.com\/food\/best-restaurants\/2020\/best-plant-based-restaurants\/\" rel=\"nofollow noopener\" target=\"_blank\">earned a spot on Edify\u2019s Best Restaurant list<\/a> more than once. From beloved tofu rolls to the popular <a href=\"https:\/\/edifyedmonton.com\/food\/eat-in-take-out-delivery\/best-things-to-eat-vermicelli-special-bowl-from-an-chay\/\" rel=\"nofollow noopener\" target=\"_blank\">vermicelli special<\/a>, you can\u2019t go wrong. For Wales, the top choice, though, is soup.<\/p>\n<p>Seitans<\/p>\n<p>Formerly <a href=\"https:\/\/edifyedmonton.com\/food\/eat-in-take-out-delivery\/lunch-break-die-pie\/\" rel=\"nofollow noopener\" target=\"_blank\">Die Pie, a plant-based pizza restaurant<\/a>, Seitans continues to offer tasty slices, but has also added vegan chicken to the menu, ranging from chickun wings to a chicken parmesan po boy to a whole slew of other appetizing options.<\/p>\n<p>Padmanadi<\/p>\n<p>This long-standing restaurant <a href=\"https:\/\/edifyedmonton.com\/food\/best-restaurants\/2024\/best-vegetarian-5\/\" rel=\"nofollow noopener\" target=\"_blank\">serves plant-based Indonesian food<\/a> \u2014 in two locations in Edmonton, and, more recently, in Calgary as well.<\/p>\n<p class=\"size20\">Like this content?
