And with the young eating out more often than previous generations, they&#8217;re demanding something different from restaurant menus.<\/p>\n<p>Taste still matters. But so do protein, fibre, healthy fats and ingredients that make them feel good rather than guilty. \u201cThe young are no longer coming to cafs only to treat themselves,\u201d says Amanda Bhandari, hospitality entrepreneur and founder of Bombay Club, a vintage cafe at Dhanmill Compound, New Delhi. \u201cThey\u2019re coming to take care of themselves. When someone eats out four or five times a week, every meal becomes a habit rather than an indulgence. That\u2019s changing the way restaurants think about food.\u201d<\/p>\n<p>The shift is visible across the dining landscape. Menus now have protein-rich dishes, sourdough, millet, fermented foods and seasonal produce. Even comfort food is being reimagined with better ingredients and more balanced nutrition.<\/p>\n<p>Bhandari believes restaurants and cafes are designing dishes people can eat repeatedly instead of chasing fleeting social media trends. \u201cEarlier, everyone wanted the next viral dessert. Now the challenge is to create food that people can enjoy regularly without compromising on nutrition. That&#8217;s a much harder and far more exciting task,\u201d says Bhandari.<\/p>\n<p>At Bombay Club, which celebrates regional Indian flavours and Mumbai street food, that philosophy shapes every dish. Instead of merely recreating street favourites, the kitchen looks for ways to retain their flavour while making them balanced. So, there\u2019s an appam paired with avocado, a poached egg and a mango-chilli drizzle bringing together carbohydrates, healthy fats, protein and fibre on a single plate.<\/p>\n<p>\u201cWe don\u2019t believe healthy food has to be boring,\u201d says Bhandari. \u201cEvery dish on our menu has the right balance of protein, good fats, fibre and carbohydrates. The idea is that you leave satisfied, not sluggish.\u201d<\/p>\n<p>The growing focus on nutrition isn&#8217;t restricted to restaurants. Young diners are reading menus differently too. Protein, once a concern largely limited to fitness enthusiasts, has entered mainstream conversations. Even vegetarians are actively seeking meals that deliver adequate protein. This awareness stems from changing lifestyles. Most people earlier ate home-cooked food through the week so nutrition was largely taken care of. Today, when eating out becomes routine, people naturally become conscious about what they&#8217;re ordering.<\/p>\n<p>Presentation continues to play a significant role, especially for a generation that often discovers food through a phone screen before tasting it. \u201cYou eat with your eyes first,\u201d says Bhandari. \u201cPlating is part of the experience. It distinguishes caf food from what you would cook at home.\u201d<\/p>\n<p>Perhaps the most encouraging change is that food has reclaimed centre stage. And Bhandari\u2019s advice for young diners is uncomplicated: don&#8217;t obsess over every calorie. \u201cOrder a salad before your meal, make sure there\u2019s some protein on your plate, and then enjoy the food. Butter and cheese aren&#8217;t the enemy. Balance is,\u201d she says.<\/p>\n<p>That best sums up the new dining culture. For Gen Z, eating out is no longer about choosing between pleasure and health.
