Royal Dornoch Golf Club\u2019s new clubhouse\u00a0is\u00a0creating new records \u2013 and\u00a0more\u00a0local jobs\u00a0\u2013 since opening in December.\u00a0<\/p>\n

Graeme Twaddle, the food and beverage manager at the famous Highland venue, has\u00a0revealed\u00a0the level of use\u00a0from\u00a0members, their\u00a0guests\u00a0and\u00a0golfing\u00a0visitors\u00a0from home and\u00a0abroad\u00a0has prompted\u00a0additional\u00a0investment behind the scenes to cater\u00a0for the unprecedented demand.\u00a0<\/p>\n

\u201cIt has been a huge learning\u00a0curve,\u00a0and\u00a0I\u2019d\u00a0like to thank\u00a0our\u00a0members for their understanding as we all settle in,\u201d said Twaddle, with\u00a0the eagerly awaited Carnegie Shield week beginning\u00a0on\u00a0Sunday.\u00a0\u201cOur top performing month historically is always August, which includes\u00a0Shield week,\u00a0but we were busier in May than we were last August, doubling the number of plates coming out of the kitchen compared with the same period last year.\u00a0<\/p>\n

\nFood and beverage manager Graeme Twaddle has been delighted with the popularity of the new clubhouse at Royal Dornoch\u00a0<\/p>\n

\u201cOn\u00a0the bar front,\u00a0last year we poured\u00a02,000 pints\u00a0in May. This\u00a0year\u00a0it\u00a0was up to 8,000. That translates to 74 kegs, as opposed to 25. It has been unprecedented.\u00a0We have had to\u00a0bring in\u00a0five more freezers to cope with demand. The\u00a0food and beverage team has been expanded by six\u00a0\u2013\u00a0they are all local\u00a0\u2013 and we are actively looking for more chefs\u00a0and\u00a0front of house\u00a0staff.\u00a0<\/p>\n

He adds: \u201cWe\u00a0anticipated\u00a0a spike when we opened back in December,\u00a0with locals curious to see what we had created here. Around 600 came through the doors on opening day alone.\u00a0 We had to hit the ground running, with 120 guests for a BID Dornoch function, but the building was designed to be multi-functional.\u00a0We have also hosted\u00a0member\u00a0birthday parties\u00a0and\u00a0pre-wedding\u00a0receptions,\u00a0Scotland\u00a0World Cup games, a July 4th\u00a0US-style BBQ\u00a0and private dining for members in our Donald Ross Room, along with welcoming various local groups.\u00a0\u00a0<\/p>\n

\u201cNaturally members are our\u00a0priority\u00a0and\u00a0it\u2019s great to see them\u00a0using the clubhouse more regularly,\u00a0bringing\u00a0friends along for the experience,\u00a0while our\u00a0playing visitors are\u00a0also\u00a0keen to enjoy food and drink before and after their rounds.\u201d\u00a0<\/p>\n

Twaddle, who moved to Inverness from Wishaw in 1991, became a Royal Dornoch member the following year\u00a0and took up his current food and beverage role nearly four years ago,\u00a0noted that the clubhouse could now\u00a0host\u00a0functions more than\u00a0twice\u00a0the size of the old\u00a0building.\u00a0<\/p>\n

\u201cThe Captain\u2019s Invitational guest weekend always has a full tee sheet of\u00a0180\u00a0and the old clubhouse could only cope with 86,\u201d he noted.\u00a0 \u201cThat meant we\u00a0required\u00a0a ballot for places at the dinner. Not any longer. We\u00a0welcomed\u00a0186, including the top table.\u00a0To cope with these numbers, we invested in everything from top of the\u00a0range\u00a0deep fat fryers and ovens which handle 180 plates in 18 minutes to a\u00a0high-tech\u00a0dishwasher which recycles the steam\u00a0produced.\u00a0<\/p>\n

\u201cOn the golf side, we report to\u00a0The\u00a0R&A for our GEO\u00a0certification\u00a0and all this technology\u00a0improves our carbon footprint.\u00a0It\u2019s\u00a0not just out on the golf courses that sustainability matters\u00a0at Royal Dornoch.\u00a0 In terms of space and technology,\u00a0it is night and day compared with the facilities within the old clubhouse.\u00a0<\/p>\n

\u201cWe were confident the new clubhouse would prove popular but even in our wildest dreams none of us were\u00a0anticipating\u00a0being quite so busy.\u00a0That has created its\u00a0own\u00a0challenges, but the team has responded magnificently.\u00a0It will be interesting to look back\u00a0on\u00a0the numbers at the end of the year to see where we are.
