Christmas Day is finally here which means kitchens across Ireland will once again packed with leftovers – and turkey usually tops the list.

While the classic turkey sandwich is a staple of St Stephen’s Day, celebrity chef Jamie Oliver says adding one simple ingredient can take it to the next level – Cranberry sauce.

Jamie has shared his festive toastie recipe, designed to use up leftover turkey, ham and vegetables, and it takes less than 15 minutes to make.

Working with Tesco, the chef said the key to making leftover turkey sandwiches “absolutely delicious” is balancing rich, savoury flavours with something sweet.

“We’re going to have some fun with this and make it absolutely delicious,” he said, before showing how a spoonful of cranberry sauce completely transforms the sandwich.

The toastie uses everyday ingredients many Irish households already have on hand after Christmas, including leftover turkey, stuffing, Brussels sprouts and cheese.

IngredientsFour slices of bread70g leftover cooked meat, such as turkey, ham, stuffing, or nut roast60g Cheddar – could also use Red Leicester, Brie, Camembert, Stilton120g cooked Brussels sprouts and carrots (or other vegetables)20g softened butterLeftover gravyOne tbsp cranberry sauceOne apple40g of watercressTwo tsp olive oilOne tsp red wine vinegarMethod

Finely chop the leftover vegetables and meat, then grate the cheese over the mixture and combine using your hands.

Spread cranberry sauce over one side of the bread – Jamie says this adds a “sweet flavour” that lifts the whole sandwich – then pile on the filling and top with another slice of bread.

Lightly butter the outside of the sandwich and cook in a large non-stick pan over a medium heat for around three minutes on each side, pressing down until golden and crispy.

Warm the leftover gravy in a separate pan to use as a dip, then grate a little extra cheese over the toastie and cook until melted.

For a simple side, slice the apple into matchsticks and toss with watercress, olive oil, vinegar, salt and pepper. Serve everything together with the hot gravy and enjoy.

The video has already racked up more than 200,000 views online, with viewers quick to praise the idea. One viewer penned: “This looks delicious and I’ll try this. Always looks so easy with Jamie Oliver.”

Another shared: “This looks so good! Definitely going to do this for lunch tomorrow!” While a third gushed: “Going to make another roast just so I can try this bad boy.” To watch the full video, visit HERE .
