Lemmingtons, on Seaview Road in Liscard, opened on January 17 following months of preparation.

Wirral’s first 100% gluten-free café and bakery offers a range of sweet and savoury goodies for those with conditions such as coeliac disease, as well as gluten intolerance and sensitivity.

Coeliac disease is a condition where a person’s immune system attacks their own tissues when eating gluten.

Wirral chef Adam McCabe, who founded Lemmingtons after struggling to find tasty, additive-free gluten-free food, said the response had been overwhelming.

He said: “We are absolutely thrilled and overwhelmed by the public response.

“We knew it was going to be a big day, but we were blown away by the demand and feedback.

“Our team worked exceptionally hard all day, and if this is a sign of things to come, we’d better prepare for a very busy year ahead.

“We’d like to thank everyone for their support and love.”

Mr McCabe first launched Lemmingtons in 2023 with his partner Danielle, attending markets across Wirral and Liverpool.

Hundreds of people called in on the day, praising the concept as “much-needed”.

The eatery is open Wednesdays to Saturdays from 10am to 4pm, with a fresh range of bakes on offer every day.
