One of Cork’s most popular lunch spots is getting a major makeover. The O’Flynn family is doing up its city centre Gourmet Sausage Co. location – and giving customers a sneak peek inside.
The Winthrop Street restaurant is closed for now while the team completes an overhaul to give it a modern new look. While it’s closed, customers can visit O’Flynn’s at the English Market for their sausage roll fix. Meanwhile, the loved family business has turned to social media to give fans a glimpse of what’s going on as they ‘rebuild’ their Hatch restaurant – its first major refurb after 17 years.
Jordan O’Flynn took to TikTok to share how the team is currently undertaking the “destruction” of the restaurant to “re-funk” the space. The ‘Hatch’ was designed nearly two decades ago, and is one of O’Flynn’s most well-known locations. The family sausage business was founded in Cork back in 1921 and is now in its fourth generation.
In a sneak peek video into the works and the city centre food spot, Jordan detailed how new changes will include new floors and a new rustic-yet-modern aesthetic. He said: “What was cool in our eyes about five years ago has changed, and we want to re-funk up the space.

Our biggest problem for years was our floor, and although it looked cool with the tiles, it got worn down a lot over time. So that wasn’t a fun job getting that off. We got a moodboard back from our designer Agne,” he said, “And I absolutely love it. It’s exactly the vibe we want: Rustic, yet modern.”
“Before any design happens, everything has to go,” Jordan continued, “Our style has changed, but also the way we want to operate. Our restaurant has changed a bit, too. Our old restaurant design was a bit rigid, and everything stuck in place with a lot of stainless steel, but cleaning and replacing equipment was always hectic.
“So, we’re looking at a free-flowing plan: all the equipment to be rolled in and out, just like our restaurant on Western Road. And this makes cleaning easier rather than having to take everything apart and clean it one by one. Another thing, space is a massive problem,” he continued,

“While we have enough for the equipment, storage space is light, so we got investigating. We realised that by knocking a few walls, we’ve more space than we thought. We designed down here like 17 or so years ago and completely forgot about an extra bit of space behind one of the walls,
“It was only a bit of partition, so it wasn’t the worst job,” Jordan said in the voiceover, showing video of the faux brick wall being torn down. The clock is ticking, though. We don’t want to be closed for too long. So please, any ideas you have, pop them in the comments below!”
O’Flynn’s factory is just outside Cork city centre, where they make sausages for retail and restaurants. Meanwhile, many customers know and love O’Flynn’s for their menu of gourmet sandwiches and sausage rolls at their home in the English Market, the Fast-Casual Restaurant on Winthrop St and the most recent location, which opened last summer.
They opened a new casual-dining restaurant on Western Road in 2025, marking its first new location in 16 years. They took over the former Fat Badgers restaurant and have a very solid relationship with Cork’s student community, as it’s practically on the doorstep of UCC.
