A popular Cork city market is getting a lovely new addition this week as a seasoned chef is launching a new grub spot with a tasty, spud-centric menu.
Simeon Stanev, the former owner of the Black Market’s Neapolitan Pizza and Taste of the Balkans, is moving just a few stalls over at the Monahan Road location with his new business, ‘Spud Hut.’ It’s an exciting new venture for the dad of three, who started cheffing after a five-year stint in the army, which began in his native Bulgaria. He stepped back from his role as Senior Sergeant to start a family and try his hand in the kitchen – and today, Simeon has almost two decades of experience working in various establishments in Cork city and abroad.
Speaking to Cork Beo, Simeon said he’s very excited for his big launch at the Black Market this Saturday (28th February). He’ll be taking over The Pie Guys’ old stall, which recently closed as the owners set up their first restaurant in Bandon. Spud Hut’s menu will have a few set options as well as a ‘build your own’ offering with three different bases – baked spuds, ‘Belgian style’ potato waffles and tater tots.
Here, customers will be able to load them up with a range of toppings and sauces, including garlic butter, curry, beans, pulled pork, crispy deep-fried chicken and much more – so there’s sure to be something for everyone’s palate. Spud Hut will also be serving the usual range of soft drinks, as well as homemade lemonade.
Simeon is inviting everyone down to try out his grub on launch day. He said: “I’m excited, it will be like my new baby. Everything I do I try to do perfect, and my customers from past businesses know that I always deliver.”
Simeon also wished all the best for The Pie Guys team, who are off to a flying start with their new spot in West Cork. Their Bandon restaurant has only been open a few weeks – but they’ve already sold out on a number of days, and owners Jamie Kelly and Tim O’Kennedy recently shared a big thank you for all the support on social media. Their new location is at 11 South Main Street in Bandon in the former Elizabeth Fashions store, which relocated across the road late last year.
