One of Ireland’s few female craft butchers, Una O’Dwyer has spent 20 years developing her father’s sausage recipe into a national brand.

“It’s amazing because sausages are quite nostalgic for people. It’s a hard market to break into because, depending on what part of the country you are in, people are very loyal.”
