Remember when most kitchens had a deep-fat fryer on hand for the making of chips? Those days are long gone and there can be few who miss them, or the attendant risk of burning the house down while making the family dinner.

Nowadays, we either make wedges in the oven – parboiling first gives the best texture – or we sling a bag of chips straight from the freezer into the oven or air fryer.
