Johnnie Fox’s pub is enjoying a busy afternoon’s trade. It is midweek at Glencullen in the Dublin Mountains, the sun is out, the tour buses have arrived, and one of its car parks features plenty of UK reg plates and hire cars.
Inside, lively trad music is playing from the speakers as servers move swiftly with plates of steaming hot food. The pub, which dates from 1798, is said to be one of the highest in Ireland and has long been on the tourist trail. It is an atmospheric spot in which to while away a couple of hours.
