The name Alumni comes from the Latin alere, to nourish, a philosophy taken seriously at one of Ireland’s most distinctive overnight dining experiences. Three nights a week, eight guests gather at a communal ironwood table in this purpose-built Kildare kitchen for a 14-course tasting menu led by the chef Philip Mahon, with Kathy, his sommelier wife, guiding the wines. Galway’s newest Michelin-starred restaurant happens to be one of Ireland’s most singular dining experiences: two beautifully restored Orient Express carriages parked on the grounds of an 18th-century estate overlooking Lough Corrib. The Pullman, led by the Greek-born chef Angelo Vagiotis, earned its Michelin star this year and shows no signs of slowing. Just ten minutes from the city, this gracious base is set on a sprawling 138-acre estate with a championship golf course.
