How can I enforce standards without my staff quitting?

Q: I run a small gastropub. Lately, whenever I ask my floor staff to help with basic “side-work” – such as polishing cutlery or restocking the bar during a lull – I get sighs and “that’s not really our job” comments.
It feels like there’s a growing sense of entitlement, with them wanting only the ‘glamour’ parts of the role.
