From the Carlton Hotel’s dramatic top-floor restaurant terrace overlooking Runway 28 at Dublin Airport, you can practically see the passengers in the planes.
But when Michael Kearney – the independent Irish hotel group’s founder and driving force – first came to this spot in 1994, it was just a field full of sheep.
