A Wicklow baker who stepped away from the farmers’ market circuit has found unexpected success with a trust‑based honesty hut on her family farm, complete with a refillable milk station that is drawing customers from across the country.
Lorraine Aspill (60), who runs Daisy Cottage Farm in Kiltegan, launched the unmanned hut last November after deciding to change how she sold her produce. Five months on, the venture, which operates on an honesty system and sells everything from fresh bread to homemade jams and pestos, has gained a strong following as shoppers seek out more affordable, local alternatives during the cost‑of‑living crisis.
