In both the summer and winter months, the Marina Market is one of the nicest spots in Cork city to grab a bite – and a new food spot has just opened for business.
Dublin-founded food business Mad Egg has set up shop at the Market. Founded in 2018, the biz has gone from strength to strength – and the new Cork stall represents their first move out of the capital.
The business was founded by Dub Conor Sheridan and Stephen O’Reilly, and since launching, their food has won them a number of glowing titles. This includes ‘Best Chicken in Ireland’ at the Deliveroo Restaurant Awards 2025, and Best Burger & American at this year’s Just Eat Awards.
A video shared today on the Marina Market’s socials gives a glimpse at the stall – and crucially its menu. You can check out what’s on offer below:

The menu is packed full of fried chicken dishes like tenders, burgers made with soft and fluffy ‘Amish roll’ buns, and chicken-and-waffles stacks – and bundle offers. There’s also a kids meal option and some classic sauces to choose from.
Mad Egg is a welcome addition to the bustling foodie neighbourhood at the Marina Market – one of several new arrivals. In August, the family team behind the award-winning Delhi2Cork Marina Market stall launched a new offering – while in April two exciting new food stalls landed in the form of Street Frites and a soup-and-sandwich spot from Local Roots & Co.
And in June, Trem de Minas Podrao opened a stall – with the owners hoping to “satisfy homesickness” for the huge Brazilian population on Leeside, as well as “introduce the best of Brazilian food to those who haven’t yet experienced it.”
