Cork dairy farmer Brian Galvin took a leap of faith when he decided to bypass the co-ops and start selling his milk directly to local businesses. Five years later, he is now using 95pc of the milk his herd of Holstein Friesians produce for the business and only sending the remaining 5pc to the co-op during peak season.

Brian says after investing €250,000 in the venture, what really established his new business was when a friend who owned a coffee cart, The Bean and Berry, at Garretstown Beach, first started buying his milk in 2021.
