Cork’s English Market has a new sandwich shop, and it’s sharing counter space with a stallholder who has been in the market for more than half a century.
Uncles, situated at the market’s Grand Parade entrance, specialises in made to order rotisserie chicken sandwiches prepared using fresh ingredients sourced directly from neighbouring traders within the market.
Managed by Colin Ryan, the new deli is headed up by the owners of city businesses Paperboys on Tobin Street, Goodhood in St Luke’s and Hansum at the Marina Market.
“Uncles is our fourth spot and second rotisserie concept it’s all about simple food done properly,” Mr Ryan said.
Uncles shares space with O’Mahony’s, a fourth-generation butcher, which has been in the market since 1974.
Eoin O’Mahony, owner of O’Mahony’s Butchers, said he was delighted to have new neighbours in the market.
“We felt Uncles was a natural high-quality fit for us,” he said.
