We asked dietitians to share the pros and cons of the ingredient, plus how it stacks against other fats.\u00a0\n<\/p>\n<p>  What Is Beef Tallow?  <\/p>\n<p id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cBeef tallow is made by slowly heating fat from beef trimmings to separate it from any meat or connective tissue,\u201d explains registered dietitian <a href=\"https:\/\/www.alyssanorthrop.com\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"externalLink\" data-ordinal=\"1\" rel=\"nofollow noopener\" target=\"_blank\">Alyssa Northrop<\/a>, MPH, RD, LMT. \u201cThe fat is then strained through a fine filter and allowed to cool and solidify.\u201d Once cooled, it becomes a stable, shelf-friendly fat with a rich flavor and a high smoke point, Peterson says.\u00a0\n<\/p>\n<p>  Benefits of Beef Tallow  <\/p>\n<p id=\"mntl-sc-block_10-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Nutritionally, here\u2019s what beef tallow has to offer, according to experts.\n<\/p>\n<p>  Contains Fat-Soluble Vitamins  <\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> According to Peterson, beef tallow contains small amounts of fat-soluble vitamins\u2014i.e., vitamins A, D, E, and K. It also supports immune function and skin health.\u00a0<br \/>\nVitamin K: \u201c<a href=\"https:\/\/www.realsimple.com\/health\/nutrition-diet\/vitamin-k-foods\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"4\" rel=\"nofollow noopener\" target=\"_blank\">Vitamin K<\/a> supports proper blood clotting, bone metabolism, and cardiovascular health,\u201d Peterson says.<\/p>\n<p id=\"mntl-sc-block_19-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cThese vitamins are best absorbed when consumed with fat, so tallow can act as both a source and a carrier, but it\u2019s not a primary or concentrated source compared to foods like liver, <a href=\"https:\/\/www.realsimple.com\/healthiest-fish-to-eat-8745384\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" rel=\"nofollow noopener\" target=\"_blank\">fatty fish<\/a>, or egg yolks,&#8221; Peterson says.\n<\/p>\n<p>  Provides Monounsaturated Fats  <\/p>\n<p id=\"mntl-sc-block_22-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> About 44% of the fat in beef tallow is monounsaturated, Northrop notes. Most of this fat is oleic acid, the same fat found in olive oil. Monounsaturated fats (and unsaturated fats in general) are often called \u201cgood\u201d fats because they have positive effects on the body. Case in point: \u201cMonounsaturated fats help support heart health, improve insulin sensitivity, and contribute to satiety, meaning meals feel more satisfying and sustaining,\u201d Peterson says. \u201cFrom a functional standpoint, these fats also support hormone production and help stabilize blood sugar when used in balanced meals.\u201d\n<\/p>\n<p>  Has a High Smoke Point  <\/p>\n<p id=\"mntl-sc-block_25-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Although beef tallow contains a decent amount of monounsaturated fat, it\u2019s relatively high in saturated fat. (More on that in a bit.) Because of this, \u201cbeef tallow may be useful for cooking foods at high temperatures,\u201d Northrop says. The reason? \u201cSaturated fats tend to have higher smoke points, which makes them more stable for high-heat cooking,\u201d she says. However, it\u2019s worth noting that other fats\u2014like <a href=\"https:\/\/www.realsimple.com\/avocado-oil-vs-olive-oil-nutrition-8576004\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" rel=\"nofollow noopener\" target=\"_blank\">avocado oil<\/a>\u2014have similar or higher smoke points with significantly less saturated fat, Northrop adds.\n<\/p>\n<p>  Downsides of Beef Tallow  <\/p>\n<p id=\"mntl-sc-block_28-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Despite the aforementioned benefits, the ingredient has some drawbacks.\n<\/p>\n<p>  Extremely High in Saturated Fat  <\/p>\n<p id=\"mntl-sc-block_31-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Although it contains fat-soluble vitamins and monounsaturated fats, beef tallow is even higher in saturated fat. \u201cAbout 50% of the calories it provides come from saturated fat, with one tablespoon containing over 6 grams of saturated fat,\u201d Northrop says. While saturated fat isn\u2019t inherently harmful, excessive intake (especially in the context of a diet low in fiber, plants, and variety) can negatively impact cardiovascular markers for some people, Peterson says. Specifically, a high intake of saturated fat can raise LDL (\u201cbad\u201d) cholesterol, according to Northrop. Over time, high LDL cholesterol levels can increase the risk of heart disease and stroke.\n<\/p>\n<p>  Is Beef Tallow Good for You?  <\/p>\n<p id=\"mntl-sc-block_34-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As with many foods, there\u2019s no one-size-fits-all answer. Whether or not beef tallow is \u201cgood\u201d for you depends on many factors, including the amount you consume and your overall eating habits. \u201cBeef tallow can absolutely fit into a healthy diet when used intentionally and in moderation, especially as part of a nutrient-dense, whole-food eating pattern. It\u2019s not a magic health food, and it\u2019s not something most people need to consume daily,\u201d Peterson says.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_36-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> With that in mind, some people might need to be extra mindful of beef tallow. For example, if you have high cholesterol levels or cardiovascular disease, you \u201cshould limit or avoid consuming beef tallow due to its high saturated fat content,\u201d Northrop says. The same goes if you have gallbladder issues or already eat a diet very high in saturated fat, Peterson adds.\n<\/p>\n<p id=\"mntl-sc-block_38-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cAs with most nutrition questions, context matters more than the ingredient itself,\u201d Peterson explains. \u201cThe healthiest approach is variety, rotating fats like <a href=\"https:\/\/www.realsimple.com\/can-you-use-olive-oil-instead-of-vegetable-oil-11867139\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" rel=\"nofollow noopener\" target=\"_blank\">olive oil<\/a>, avocado oil, butter, and tallow based on cooking method, use, tolerance, and overall dietary balance.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"Key Takeaways Beef tallow is trending\u2014but it\u2019s not new.
