{"id":290882,"date":"2026-02-10T17:46:09","date_gmt":"2026-02-10T17:46:09","guid":{"rendered":"https:\/\/www.newsbeep.com\/ie\/290882\/"},"modified":"2026-02-10T17:46:09","modified_gmt":"2026-02-10T17:46:09","slug":"dublin-restaurant-shut-as-bucket-of-brown-liquid-found","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/ie\/290882\/","title":{"rendered":"Dublin restaurant shut as &#8216;bucket of brown liquid&#8217; found"},"content":{"rendered":"<p>A Dublin restaurant where inspectors found a &#8220;bucket of brown unidentifiable liquid&#8221; beneath the sink in its bar was among four businesses issued with closure orders last month.<\/p>\n<p>The inspection at Chillers restaurant in the Liffey Valley Complex also found an accumulation of grease deposits on the ceiling tiles above a utensil wash sink.<\/p>\n<p>The &#8220;bucket of brown unidentifiable liquid&#8221; also contained white pipes, according to a report by the Food Safety Authority of Ireland (FSAI).<\/p>\n<p>The restaurant&#8217;s dishwasher was broken, leaving staff with &#8220;insufficient capability to clean equipment and utensils,&#8221; according to the FSAI.<\/p>\n<p>The authority also said that staff observed handling food in the kitchen &#8220;did not demonstrate knowledge and or understanding of safe food handling practices or personal hygiene practices&#8221;.<\/p>\n<p>&#8220;Staff could not explain safe food cooling processes, traceability and were not observed to wash their hands in the kitchen area,&#8221; it said.<\/p>\n<p>The walls, wall floor junction and doors in the main kitchen were &#8220;spattered with food and dirty throughout&#8221;, it said.<\/p>\n<p>The restaurants cooker hob and oven were greasy and dirty, the FSAI found.<\/p>\n<p>Meanwhile, two microwaves were dirty and covered in dried food residue. Several pieces of cooked fish were left on a counter at a temperature of 15.9C.<\/p>\n<p>Staff were unable to indicate when the fish was cooked or removed from chilled storage, and there were no records to support the cooking or cooling process.<\/p>\n<p>The Shamrock Lodge&#8217;s kitchen in Finglas was also closed after a major leak from its ceiling required four or five buckets placed on the floor and on surfaces where food was being prepared.<\/p>\n<p>The inspector said this &#8220;posed a grave and immediate danger to public health&#8221;.<\/p>\n<p>The White Sands Hotel in Portmarnock was forced to close its small kitchen on the ground floor in January due to rodent activity.<\/p>\n<p>Foods labelled with &#8216;use by&#8217; dates for the purpose of sale or supply in O&#8217;Connell\u2019s food store were held.<\/p>\n<p>The move came after an inspector found the store on Main Street, Bansha in Tipperary, had placed unsafe food on the market.<\/p>\n<p>Milk with a use by date of 15 January was found during an inspection on 19 January.<\/p>\n<p>Cooked ham with a use by date of 7 January and rashers labelled with use by dates of 29 December were also found.<\/p>\n<p>FSAI Chief Executive Greg Dempsey said inspectors are finding &#8220;recurring incidents of unhygienic practices and rodent infestations in food businesses&#8221;.<\/p>\n<p>&#8220;Implementing and maintaining a food safety management system is a basic requirement and should be of the highest importance for food businesses,&#8221; he said.<\/p>\n<p>Mr Dempsey added that &#8220;maintaining a clean premises is not a \u2018nice to have\u2019 &#8211; it is a basic legal requirement&#8221;.<\/p>\n<p>&#8220;All food businesses have a duty of care to their customers to serve food that is prepared in a clean premises and is safe to eat.<\/p>\n<p>&#8220;There is no excuse for bad practice,&#8221; he said.<\/p>\n","protected":false},"excerpt":{"rendered":"A Dublin restaurant where inspectors found a &#8220;bucket of brown unidentifiable liquid&#8221; beneath the sink in its bar&hellip;\n","protected":false},"author":2,"featured_media":184810,"comment_status":"","ping_status":"","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[3],"tags":[42,43,40,38,41,39],"class_list":{"0":"post-290882","1":"post","2":"type-post","3":"status-publish","4":"format-standard","5":"has-post-thumbnail","7":"category-headlines","8":"tag-headlines","9":"tag-news","10":"tag-top-news","11":"tag-top-stories","12":"tag-topnews","13":"tag-topstories"},"_links":{"self":[{"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/posts\/290882","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/comments?post=290882"}],"version-history":[{"count":0,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/posts\/290882\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/media\/184810"}],"wp:attachment":[{"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/media?parent=290882"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/categories?post=290882"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.newsbeep.com\/ie\/wp-json\/wp\/v2\/tags?post=290882"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
