On the edge of the Atlantic in Louisburgh, Co. Mayo<\/a> where the landscape shifts with tide and weather, Nicole O\u2019Malley is building something that goes beyond coffee.<\/p>\n

What began as a seasonal horsebox caf\u00e9 has grown into a multi-layered venture\u2014part food business, part wellness hub, part community movement. Through Melody\u2019s Food, Coffee & Community, O\u2019Malley is quietly reshaping how people gather, connect and spend time outdoors in rural Ireland.<\/p>\n

\u201cI\u2019ve had the pleasure of growing up here,\u201d she says. Raised on a small farm in nearby Killadoon, surrounded by sea views in almost every direction, her connection to place runs deep. \u201cIt\u2019s been a lovely place to grow up\u2014and now I work in something centred around being out in nature.\u201d<\/p>\n

That connection is at the heart of everything she does. After studying science in the University of Limerick, O\u2019Malley\u2019s plans to travel to the US in 2020 were abruptly halted. Instead, she turned her attention to an idea that had been quietly forming: a mobile coffee business.<\/p>\n

\u201cI thought it would be really cool to park something at the beach,\u201d she says. What began as a vague concept\u2014even briefly imagined as an Airbnb-style trailer\u2014quickly evolved into a coffee horsebox, filling a gap locally while offering people a reason to explore the area.<\/p>\n

The trailer itself, a vintage 1970s horsebox, reflects both practicality and personality. \u201cSome of it was cost, some of it was creative,\u201d she explains. \u201cBut it also ties back to growing up around horses.\u201d\u00a0<\/p>\n

The name, Melody\u2019s, comes from a family connection\u2014a horse belonging to her late uncle\u2014and has since taken on a life of its own. \u201cAt this stage, people just call me Melody,\u201d she laughs.<\/p>\n

But the business didn\u2019t stop at coffee.<\/p>\n

After a challenging summer in 2023\u2014marked by poor weather, low footfall and a difficult personal transition after solo travel\u2014O\u2019Malley began to rethink her approach. \u201cI realised I couldn\u2019t rely on passing traffic,\u201d she says. \u201cI needed to create a reason for people to come together.\u201d<\/p>\n

From that shift came the Summer Fun programme: a series of outdoor events including yoga on the beach, Pilates, hikes and wellness workshops. What started as a seasonal offering has since evolved into a year-round calendar, expanding into social suppers and surf gatherings.<\/p>\n

The response was gradual\u2014but meaningful.<\/p>\n

One moment in particular stands out. During a beach yoga session with around 30 participants, she overheard a passerby remark: \u201cSomebody has been doing a lot of work on their business or community.\u201d\u00a0\u00a0<\/p>\n

\u201cThat really stayed with me,\u201d she says. \u201cBecause it\u2019s true\u2014it has been a lot of work.\u201d<\/p>\n

Today, those events have become a recognised part of local life, recently earning a national shortlisting for Best Outdoor Experience of the Year with Outsider.ie. For O\u2019Malley, the recognition meant more than the title. \u201cThe voting was public, so it meant a lot that people took the time,\u201d she says. \u201cThat support is everything.\u201d<\/p>\n

Her focus on wellbeing and connection has also led to her latest venture: Tine Sauna, a licensed seaside sauna overlooking Clew Bay. Designed as both a social and restorative space, it offers panoramic views stretching from Croagh Patrick to Achill Island.<\/p>\n

\u201cIt\u2019s about access,\u201d she explains. \u201cAccess to the sea, to nature, to a different kind of social space.\u201d<\/p>\n

Despite juggling multiple ventures\u2014events, catering, the coffee trailer and now the sauna\u2014O\u2019Malley describes her lifestyle as \u201ca good kind of busy.\u201d<\/p>\n

\u201cI get a lot of energy from what I do,\u201d she says. \u201cI tried other paths, like teaching, and while I loved aspects of it, it just didn\u2019t feel like the right fit. This does.\u201d<\/p>\n

That sense of alignment has been hard-won. After stepping away from teaching, she spent time travelling in South America while completing a master\u2019s in psychology\u2014an experience that continues to shape her work. \u201cI saw these amazing community-based classes and events,\u201d she says. \u201cI thought, why can\u2019t we have that in Mayo?\u201d<\/p>\n

Now, she\u2019s bringing those ideas home\u2014adapting them to local rhythms, weather and community needs.<\/p>\n

Listening, she says, has been key. \u201cI ask people a lot\u2014what they like, what they\u2019d come to. And I follow what works.\u201d That openness has guided everything from event formats to new offerings, allowing the business to evolve organically.<\/p>\n

Alongside her events and hospitality work, O\u2019Malley is also preparing to take her homemade food products to retail. After completing the SuperValu Food Academy programme, she has developed a range of energy bars and \u201cpower bites,\u201d moving through the complex process of packaging, testing and distribution.<\/p>\n

\u201cIt\u2019s been really challenging,\u201d she admits. \u201cThe bar is so high in retail. But I\u2019ve learned so much.\u201d<\/p>\n

Looking ahead, her ambitions are both grounded and expansive: more collaborations, more creative events, and eventually, a wider rollout of her food range. But at its core, the mission remains the same.<\/p>\n

\u201cI\u2019d love to make it a nationwide brand,\u201d she says, \u201cbut still keep the same values.\u201d<\/p>\n

Those values\u2014community, wellbeing, creativity\u2014are what continue to draw people in, whether for a morning swim and sauna, a beach yoga session, or simply a coffee beside the Atlantic.<\/p>\n

Because at Melody\u2019s, it\u2019s never just about the coffee. It\u2019s about creating a space\u2014however temporary or weather-dependent\u2014where people can come together, slow down, and feel part of something.<\/p>\n
