Kennedy Jr. said that by following a carnivore diet, he had nearly eliminated a dangerous type of fat from his body.<\/p>\n<p class=\"css-ac37hb evys1bk0\">After an M.R.I. a year ago revealed that his \u201corgans were covered with visceral fat,\u201d he said in the video, a doctor told him that following the carnivore diet could help him eliminate the fat within 90 days.<\/p>\n<p class=\"css-ac37hb evys1bk0\">After a month on the diet, Mr. Kennedy went on, his visceral fat had reduced by 40 percent. Now, he added, he \u201cwas down to 1 percentile of visceral fat.\u201d (The Department of Health and Human Services did not respond to a request for clarification on what he meant by this.)<\/p>\n<p class=\"css-ac37hb evys1bk0\">The carnivore diet has become a mainstay of Mr. Kennedy\u2019s Make America Healthy Again movement. Joe Rogan, the influential podcaster, helped popularize the diet after he interviewed an early advocate in 2017. Mr. Kennedy has recently promoted the diet\u2019s health benefits, with claims it has improved his \u201c<a class=\"css-yywogo\" href=\"https:\/\/www.usatoday.com\/story\/news\/nation\/2026\/01\/22\/usa-today-sits-down-with-hhs-secretary-rfk-jr-for-an-exclusive-the-excerpt\/88287278007\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">mental clarity<\/a>\u201d and helped him lose weight.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201cAbout half of the cabinet is on this same diet right now,\u201d he said in the video posted on X.<\/p>\n<p class=\"css-ac37hb evys1bk0\">We asked experts to explain what visceral fat is, and if it was possible that the carnivore diet could eliminate it.<\/p>\n<p>What is visceral fat?<\/p>\n<p class=\"css-ac37hb evys1bk0\">Visceral fat is a type of fat that is stored deep within the abdomen, around internal organs like the intestines, pancreas and kidneys, said Dr. Samuel Klein, a professor of medicine and nutritional science at WashU Medicine in St. Louis. Having too much visceral fat is associated with greater risks of Type 2 diabetes, cardiovascular disease and <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2026\/01\/16\/well\/metabolic-health.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">impaired metabolic health<\/a>, he said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201cIf you have high visceral fat, you\u2019re in trouble,\u201d Dr. Klein said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Research suggests that visceral fat is more dangerous than subcutaneous fat \u2014 the \u201cpinchable\u201d kind that sits just beneath your skin and tends to accumulate around the hips, butt, belly and thighs, said Dr. Melanie Jay, director of the NYU Langone Comprehensive Program on Obesity Research.<\/p>\n<p class=\"css-ac37hb evys1bk0\">This is why having an \u201capple-shaped\u201d body, with more fat around your middle section, is usually more dangerous than having a \u201cpear-shaped\u201d body, with more fat around the thighs and hips, she said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">You don\u2019t need to get a full-body M.R.I., as Mr. Kennedy has done, to understand your level of visceral fat. A simpler way to gauge it is to measure your waist circumference, Dr. Jay said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Your doctor can also check other aspects of your metabolic health, like your blood pressure, blood sugar, blood lipid levels and <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2025\/06\/19\/well\/inflammation-health.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">inflammatory markers in your blood<\/a>, Dr. Jay said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">If your waist circumference and test results are normal, she said, you probably don\u2019t have a lot of visceral fat.<\/p>\n<p>Can a carnivore diet eradicate visceral fat?<\/p>\n<p class=\"css-ac37hb evys1bk0\">Adherents of the <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2024\/04\/30\/style\/meet-the-men-who-eat-meat-and-only-meat.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">carnivore diet<\/a> generally eat only animal foods like beef, chicken, pork, fish, eggs and full-fat dairy products. Carbohydrate-rich foods like fruits, vegetables, grains, nuts, seeds and legumes are discouraged, though Mr. Kennedy has said that he eats fermented vegetables like kimchi and sauerkraut.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Because the carnivore diet is so restrictive, some people who follow it lose weight, and weight loss can result in some visceral fat loss, Dr. Klein said. But, he added, there\u2019s no evidence that a carnivore diet (or any diet for that matter) will reduce visceral fat completely within a short period of time, such as 90 days. You wouldn\u2019t want to eliminate all visceral fat anyway, Dr. Klein said \u2014 it\u2019s normal to have a little bit.<\/p>\n<p class=\"css-ac37hb evys1bk0\">There\u2019s also no research suggesting that the carnivore diet reduces visceral fat more than other diets, he said. When asked for evidence to support the idea that the carnivore diet helps eliminate visceral fat, H.H.S. did not respond.<\/p>\n<p class=\"css-ac37hb evys1bk0\">There are some concerns with eating mostly meat, Dr. Jay said. Diets high in processed meat and red meat are associated with greater risks of developing <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2024\/08\/20\/well\/eat\/red-meat-diabetes-study.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">Type 2 diabetes<\/a> and cancer \u2014 including <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2025\/08\/02\/well\/how-your-diet-influences-your-colorectal-cancer-risk.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">colorectal cancer<\/a>, which is <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2026\/03\/02\/well\/colorectal-cancer-young.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">increasing in younger adults<\/a>.<\/p>\n<p class=\"css-ac37hb evys1bk0\">The carnivore diet is usually high in <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2025\/12\/09\/well\/eat\/saturated-fat-health-risks-dietary-guidelines.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">saturated fats<\/a>, which can increase your blood levels of LDL (or \u201cbad\u201d) cholesterol, and with it the risk of cardiovascular disease. Eating fruits, vegetables, whole grains, legumes and other plant foods is associated with reduced risks of those health conditions, so avoiding them on the carnivore diet means you\u2019ll miss out on such benefits. You\u2019ll also lack beneficial fiber.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Eating mostly meat can get expensive too, Dr. Jay said \u2014 many \u201cpeople can\u2019t afford to eat a steak multiple times a day.\u201d<\/p>\n<p class=\"css-ac37hb evys1bk0\">For long-term health, including keeping visceral fat levels low, Dr. Jay recommended adopting a balanced diet you can sustain. She usually suggests a <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/explain\/2024\/mediterranean-diet\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">Mediterranean-style diet<\/a>, which emphasizes vegetables, whole grains, legumes, nuts, fish and healthy cooking oils like olive oil and canola oil. This eating pattern is backed by <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2023\/01\/06\/well\/eat\/mediterranean-diet-health.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">decades of research<\/a> showing it can reduce the risks of cardiovascular disease, Type 2 diabetes and other chronic diseases.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Exercise, especially cardiovascular exercise, can also help reduce visceral fat, even if you don\u2019t lose weight, Dr. Klein said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201cSecretary Kennedy obviously exercises regularly, so he\u2019s doing himself a real service for his health,\u201d Dr. Klein said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Maintaining a healthy body weight and limiting foods rich in refined carbohydrates like sodas, white breads and sugary breakfast cereals can help keep visceral fat levels low too, Dr. Klein added. \u201cThose are the things you would recommend for every American,\u201d he said.<\/p>\n","protected":false},"excerpt":{"rendered":"In a recent video posted on X, health secretary Robert F.
