But, what about a sit-down dining experience in the midst of all the madness? <\/p>\n<p class=\"c-paragraph paywall \">This is exactly what festivalgoers can expect from <a href=\"https:\/\/www.irishtimes.com\/tags\/beyond-the-pale\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/beyond-the-pale\/\">Beyond the Pale<\/a>, which takes place from June 12th-14th at the Glendalough Estate, <a href=\"https:\/\/www.irishtimes.com\/tags\/wicklow\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/wicklow\/\">Wicklow<\/a>. <\/p>\n<p class=\"c-paragraph paywall \">The festival, now in it\u2019s fifth year, is taking the taste of south Dublin out to the woods, with <a href=\"https:\/\/www.irishtimes.com\/tags\/ranelagh\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/ranelagh\/\">Ranelagh\u2019s<\/a> Host and <a href=\"https:\/\/www.irishtimes.com\/tags\/rathmines\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/rathmines\/\">Rathmines\u2019s<\/a> <a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/review\/2025\/01\/30\/reggies-pizzeria-review-the-margherita-is-a-study-in-simplicity-at-this-ambitious-new-rathmines-venture\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/review\/2025\/01\/30\/reggies-pizzeria-review-the-margherita-is-a-study-in-simplicity-at-this-ambitious-new-rathmines-venture\/\">Reggie\u2019s Pizzeria<\/a> offering dining experiences, as well as Ibile, a pop-up restaurant showcasing <a href=\"https:\/\/www.irishtimes.com\/food\/2024\/12\/02\/west-african-food-is-finally-taking-its-place-at-irish-tables\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/2024\/12\/02\/west-african-food-is-finally-taking-its-place-at-irish-tables\/\">West African-dishes<\/a>.<\/p>\n<p class=\"c-paragraph paywall \">But just how easy \u2013 or difficult \u2013 will it be to bring high-quality <a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/\">restaurant<\/a> dishes to a festival environment?<\/p>\n<p class=\"c-paragraph paywall \">Host\u2019s head chef Niall McDermott says their main focus for the weekend will be cooking steaks on an open fire, paired with some Irish and Italian produce. Their menu for the weekend shows a sharing 800g McLoughlin\u2019s strip loin on the bone.<\/p>\n<p class=\"c-paragraph paywall \">\u201cWe\u2019ll try to keep it simple enough with the other stuff, so everything\u2019s kind of fresh and ambient and dressed. We won\u2019t have much other hot stuff apart from the meat,\u201d he says.<\/p>\n<p class=\"c-paragraph paywall \">Structurally simple, perhaps, but these dishes certainly won\u2019t be an afterthought. Expect the likes of burrata with Sicilian peach and white balsamic; fennel salami with marinated peppers; and Sardinian tomato with onion and tarragon.<\/p>\n<p class=\"c-paragraph paywall \">Those who may be having flashbacks to outdoor dining in the times of the pandemic need not fear, however, as the experience is set up for rain, hail or shine.<\/p>\n<p class=\"c-paragraph paywall \">\u201cIt\u2019s a proper marquee with proper seating and a proper floor and everything, so it will be like a restaurant experience. Photograph: Bryan O\u2019Brien <\/p>\n<p class=\"c-paragraph paywall \">For Reggie White, of the much-loved Rathmines pizzeria, he knew he wanted to be involved when he saw what a \u201cquality operation\u201d it was going to be. <\/p>\n<p class=\"c-paragraph paywall \">\u201cI didn\u2019t give it much more thought other than, \u2018How nice would it be to be down at a festival to get restaurant quality food?\u2019,\u201d White says.<\/p>\n<p class=\"c-paragraph paywall \">Like any other busy Saturday night, he says a lot of prep has to be done in advance so it won\u2019t take too much adjustment to bring it all down to Wicklow.<\/p>\n<p class=\"c-paragraph paywall \">White wants his customers to feel like they\u2019re in the restaurant with the quality of food that is delivered \u201cas opposed to a burger and chips out of a van for 14 quid\u201d.<\/p>\n<p class=\"c-paragraph paywall \">\u201cI just couldn\u2019t ever see any joy in it \u2013 even if you told me I was going to make five-times the money \u2013 in watching every person walk away and feel like they\u2019ve been mugged. I feel like it has to be just as good when we\u2019re down at Beyond the Pale as it would be at the restaurant.\u201d<\/p>\n<p class=\"c-paragraph b-it-article-body__interstitial-link\">[\u00a0<a aria-label=\"Open related story\" class=\"c-link\" href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/review\/2025\/01\/30\/reggies-pizzeria-review-the-margherita-is-a-study-in-simplicity-at-this-ambitious-new-rathmines-venture\/\" rel=\"noreferrer nofollow noopener\" target=\"_blank\">Reggie\u2019s Pizzeria review: The Margherita is a study in simplicity at this ambitious new Rathmines ventureOpens in new window<\/a>\u00a0]<\/p>\n<p class=\"c-paragraph paywall \">On their menu are four different types of 10\u201d pizzas to share, ricotta meatballs, garlic bread, arancini and sticky toffee pudding for dessert.<\/p>\n<p class=\"c-paragraph paywall \">Returning to the festival is Tolu Asemota and his Ibile team. The West African-inspired menu brings the likes of jollof rice and beef cheek croquettes for entr\u00e9e; plantain waffles and Yaji fried chicken, yam porridge and golden morn crusted French toast for mains; and a selection of desserts. <\/p>\n<p class=\"c-paragraph paywall \">\u201cThe whole Ibile brand, it\u2019s West African-food but it\u2019s art, it\u2019s culture. And what we\u2019re trying to bring to Beyond the Pale is West African-cuisine, but from a different lens,\u201d Asemota says.<\/p>\n<p class=\"c-paragraph paywall \">Asemota is excited to bring the experience back this year in the form of a sit-down dinner as they often do tasting menus around the country. \u201cWe are getting to do our actual experiences at a festival. It\u2019s kind of like us bringing our brand the exact way we want it to be portrayed to the festival, as opposed to just selling food as a normal vendor. <\/p>\n<p class=\"c-paragraph paywall \">\u201cYou get to really connect to the guests. You get to talk to them about the dishes. You get to tell them about the region that the dish is from. They try something new and you\u2019re also storytelling as well, and that\u2019s what\u2019s really exciting for us.\u201d<\/p>\n<p class=\"c-paragraph paywall \">Bookings are open for each experience now, with a minimum of four per booking for Reggie\u2019s and Ibile. Prices start at \u20ac65 per person, excluding fees. It\u2019s a far cry from a serving of curry chips, but could this be the future of festival food? <\/p>\n<p class=\"c-paragraph paywall \">Aside from the restaurant bookings, the festival has a full Beyond the Plate experience for any foodies in attendance. Food writer Ali Dunworth has curated a whole line-up of events, which are all included with your ticket and feature the likes of Cassie Stokes, Joe Macken, Louise McSharry, Shane Smith and more.
