{"id":82084,"date":"2025-10-15T11:57:07","date_gmt":"2025-10-15T11:57:07","guid":{"rendered":"https:\/\/www.newsbeep.com\/ie\/82084\/"},"modified":"2025-10-15T11:57:07","modified_gmt":"2025-10-15T11:57:07","slug":"dublin-restaurateur-says-a-top-fine-dining-meal-could-cost-e1000-per-person-in-future-the-irish-times","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/ie\/82084\/","title":{"rendered":"Dublin restaurateur says a top fine-dining meal could cost \u20ac1,000 per person in future \u2013 The Irish Times"},"content":{"rendered":"<p class=\"c-paragraph paywall b-it-article-body__text--left\">A meal with <a href=\"https:\/\/www.irishtimes.com\/tags\/wine\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/wine\/\">wine<\/a> in a top <a href=\"https:\/\/www.irishtimes.com\/tags\/fine-dining\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/fine-dining\/\">fine-dining<\/a> <a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/\">restaurant<\/a> could in the future cost as much as \u20ac1,000 per person, an eminent <a href=\"https:\/\/www.irishtimes.com\/ireland\/dublin\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/ireland\/dublin\/\">Dublin<\/a> restaurateur told a conference in the city on Tuesday.<\/p>\n<p class=\"c-paragraph paywall b-it-article-body__text--left\"><a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/2024\/11\/03\/chapter-one-chef-mickael-viljanen-i-was-meant-to-stay-in-ireland-for-a-year-and-thats-24-years-ago\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/2024\/11\/03\/chapter-one-chef-mickael-viljanen-i-was-meant-to-stay-in-ireland-for-a-year-and-thats-24-years-ago\/\">Chapter One<\/a> co-owner Ross Lewis said \u201cwealthy individuals\u201d would seek the \u201cultimate luxury\u201d in fine dining and would be willing to pay the highest prices for it. <\/p>\n<p class=\"c-paragraph paywall b-it-article-body__text--left\">Lewis, who also owns Osteria Lucio in Dublin, told the <a href=\"https:\/\/www.irishtimes.com\/tags\/iput\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/tags\/iput\/\">Iput<\/a>-organised panel event on the future of dining that the best restaurants will remain those that have \u201cemotional equity\u201d.<\/p>\n<p class=\"c-paragraph paywall \">\u201cYou always remember with a restaurant how it makes you feel,\u201d Lewis said.<\/p>\n<p class=\"c-paragraph paywall \">He said small employers in the sector are under much more pressure at the moment than restaurants backed by larger groups.<\/p>\n<p class=\"c-paragraph paywall \">\u201cLarger restaurants backed by private equity can lose money for up to three years,\u201d Lewis said, adding that such establishments are \u201ceating the lunch\u201d of smaller places.<\/p>\n<p class=\"c-paragraph paywall \">\u201cIt\u2019s an uphill battle.\u201d<\/p>\n<p class=\"c-paragraph paywall b-it-article-body__text--left\">Robbie Bargh of London-based hospitality agency Gorgeous Group told the gathering of chefs and restaurant-owners that restaurants sometimes get too \u201cobsessed\u201d with their food, neglecting the other pieces that complete the jigsaw of a dining experience. Thursday is the new Friday\u2019Opens in new window<\/a>\u00a0]<\/p>\n<p class=\"c-paragraph paywall b-it-article-body__text--left\">Food writer <a href=\"https:\/\/www.irishtimes.com\/life-style\/people\/2025\/05\/03\/you-get-obsessed-lunch-at-chapter-one-with-arguably-one-of-the-worlds-best-food-writers\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/life-style\/people\/2025\/05\/03\/you-get-obsessed-lunch-at-chapter-one-with-arguably-one-of-the-worlds-best-food-writers\/\">Tim Hayward<\/a>, best-known for his time at the Financial Times and the Guardian, said the smartest way to appeal to multiple categories of customer at the same time is to use \u201cthe ancient tool of hospitality\u201d. He said this sees a host taking a customer into their control and the customer yielding to this. Hayward emphasised the importance of simple eye contact.<\/p>\n<p class=\"c-paragraph paywall \">Marina O\u2019Loughlin, Financial Times columnist and former restaurant critic at the Guardian and the Sunday Times, agreed, saying: \u201cYou want to walk in and for somebody to make you feel as if you belong.\u201d<\/p>\n<p class=\"c-paragraph paywall \">On the future of fine dining, O\u2019Loughlin said people had been predicting the death of fine dining for a decade and a half, but that such restaurants had not disappeared.
