She explained that green bell peppers are high in chlorophyll, a pigment that gives them their green color. \u201cAs the peppers mature on the vine, the chlorophyll breaks down, and more carotenoids [a type of antioxidant] are produced, accounting for the change in color and nutrient profile,\u201d she said. Registered dietitian and intuitive eating counselor <a href=\"https:\/\/karalydon.com\/\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"Kara Lydon\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/karalydon.com\/\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"9\" rel=\"nofollow noopener\" target=\"_blank\">Kara Lydon<\/a> recommends eating red bell peppers. \u201cRed bell peppers typically come out on top in terms of overall nutritional value. Since red peppers ripen the longest, they boast the most antioxidants,\u201d she said. Registered dietitian <a href=\"https:\/\/www.onceuponapumpkinrd.com\/about\/\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"Maggie Michalczyk \" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/www.onceuponapumpkinrd.com\/about\/\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"10\" rel=\"nofollow noopener\" target=\"_blank\">Maggie Michalczyk <\/a>said this too, explaining, \u201cRed bell peppers are the highest in vitamin C and A due to longer ripening times, followed by orange, yellow and green.\u201d<\/p>\n<p>In terms of which color bell pepper offers the most immune support, red comes out on top again. \u201cStudies show that red bell peppers have the highest content of vitamin C out of all the bell peppers, potentially as high as 60% more vitamin C than their green counterparts,\u201d Lydon shared, highlighting <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16019314\/\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"a study published in the\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16019314\/\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"11\" rel=\"nofollow noopener\" target=\"_blank\">a study published in the International Journal of Food Science and Nutrition<\/a>. As Michalczyk pointed out earlier, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17995862\/\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"red bell peppers\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17995862\/\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"12\" rel=\"nofollow noopener\" target=\"_blank\">red bell peppers<\/a> are also the highest in vitamin A, another nutrient that supports immune health. <\/p>\n<p>But don\u2019t discount orange, yellow and green<\/p>\n<p>Even though red bell peppers are the most nutrient-rich, that doesn\u2019t mean that orange, yellow and green bell peppers aren\u2019t worth eating. All three dietitians emphasized that the nutritional differences between different colored bell peppers aren\u2019t huge, so you shouldn\u2019t get too hung up on it.<\/p>\n<p>\u201cEach bell pepper offers a unique antioxidant profile, so it\u2019s best to \u2018eat the colors of the rainbow\u2019 when it comes to bell peppers so that you can reap the nutritional benefits of each kind,\u201d Lydon said. For example, yellow bell peppers are particularly high in <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC6827103\/\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"lutein and zeaxanthin\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC6827103\/\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"13\" rel=\"nofollow noopener\" target=\"_blank\">lutein and zeaxanthin<\/a>, two nutrients that support eye health. <\/p>\n<p>As for green bell peppers, Hultin said they are lower in calories. \u201cGreen bell peppers have slightly fewer calories than their red, orange and yellow counterparts since they are less ripe and their natural sugars haven\u2019t accumulated yet. However, this difference is negligible,\u201d she said. A red bell pepper contains about <a href=\"https:\/\/www.eatthismuch.com\/calories\/red-bell-pepper-2440\" target=\"_blank\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"37 calories\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/www.eatthismuch.com\/calories\/red-bell-pepper-2440\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"14\" rel=\"nofollow noopener\">37 calories<\/a> per pepper, while a <a href=\"https:\/\/nutriscan.app\/calories-nutrition\/green-bell-pepper\" target=\"_blank\" role=\"link\" class=\" js-entry-link cet-external-link\" data-vars-item-name=\"green pepper contains 24\" data-vars-item-type=\"text\" data-vars-unit-name=\"6941aaf3e4b06cf6877f4c25\" data-vars-unit-type=\"buzz_body\" data-vars-target-content-id=\"https:\/\/nutriscan.app\/calories-nutrition\/green-bell-pepper\" data-vars-target-content-type=\"url\" data-vars-type=\"web_external_link\" data-vars-subunit-name=\"article_body\" data-vars-subunit-type=\"component\" data-vars-position-in-subunit=\"15\" rel=\"nofollow noopener\">green pepper contains 24<\/a>.<\/p>\n<p>It bears repeating that when it comes to the nutritional differences among bell pepper colors, all three dietitians say these differences are pretty minimal across the board, so it\u2019s important not to get too hung up on them.<\/p>\n<p>How you cook them matters<\/p>\n<p>If you want to get the maximum benefits from your peppers, how you cook them matters. \u201cSteaming and stir-frying are two good ways to cook bell peppers to help prevent the loss of water-soluble vitamins like vitamin C,\u201d Michalczyk said. <\/p>\n<p>She recommends avoiding boiling or cooking bell peppers at high heat to preserve their nutrient density as much as possible. \u201cIt\u2019s good to keep in mind that overcooking can degrade nutrients found in vegetables and boiling can cause the water-soluble vitamins to leach into the water,\u201d she explained.<\/p>\n<p>Since vitamin A is fat-soluble, Hultin recommends saut\u00e9ing peppers in extra-virgin olive oil to help maximize nutrient absorption.<\/p>\n<p>There is no shortage of bell pepper recipes you can find online to experiment with to learn your favorite ways to eat bell peppers. Lydon said that, personally, she loves stuffed bell peppers because they\u2019re easily customizable based on taste preferences and the ingredients you have on hand. \u201cMake it a well-balanced, satisfying meal by adding a source of lean protein like ground turkey, chicken or fish, a starch high in fiber like brown rice or quinoa and a dietary fat like cheese or avocado,\u201d she shared.<\/p>\n<p>Hultin says that bell peppers can be easily mixed into soups, stews, omelettes or frittatas for breakfast, roasted as a side or enjoyed raw and sliced to pair with hummus. <\/p>\n<p>\u201cUltimately, all colors of bell peppers make a great addition to the diet, so I wouldn\u2019t stress too much about getting one color vs. the other,\u201d Michalczyk emphasized. \u201cGo for a variety to reap the benefits from the health compounds that are unique to each color.
