{"id":499823,"date":"2026-06-18T22:27:25","date_gmt":"2026-06-18T22:27:25","guid":{"rendered":"https:\/\/www.newsbeep.com\/il\/499823\/"},"modified":"2026-06-18T22:27:25","modified_gmt":"2026-06-18T22:27:25","slug":"what-kenyas-fish-markets-tell-us-about-choosing-between-nutrients-and-contaminants","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/il\/499823\/","title":{"rendered":"What Kenya\u2019s fish markets tell us about choosing between nutrients and contaminants"},"content":{"rendered":"<p>At lakeside markets along <a href=\"https:\/\/theconversation.com\/fish-farming-is-booming-in-lake-victoria-but-pollution-and-disease-are-wiping-out-millions-how-to-reduce-losses-266073\" rel=\"nofollow noopener\" target=\"_blank\">Lake Victoria<\/a>, Africa\u2019s largest lake by area, choosing fish to eat is part of daily life. A customer might pick a <a href=\"https:\/\/www.alimentarium.org\/en\/fact-sheet\/tilapia\" rel=\"nofollow noopener\" target=\"_blank\">tilapia<\/a> based on its freshness, size, price, and farmed or non-farmed origin, much like shoppers do in markets and supermarkets around the world. Whether grilled tilapia or salmon fillet, <a href=\"https:\/\/doi.org\/10.1073\/pnas.2426844122\" rel=\"nofollow noopener\" target=\"_blank\"><a href=\"https:\/\/theconversation.com\/this-mediterranean-style-diet-could-keep-your-brain-sharp-as-you-age-new-study-278461\" rel=\"nofollow noopener\" target=\"_blank\">fish<\/a> are a key source of healthy fats, such as omega-3s, essential for <a href=\"https:\/\/doi.org\/10.1038\/nrcardio.2009.188\" rel=\"nofollow noopener\" target=\"_blank\">heart health<\/a>. But these nutrients are invisible. We can\u2019t see what\u2019s inside the fish displayed at the market.<\/p>\n<p>Risks are similarly invisible; as waters <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0025326X25007945#s0105\" rel=\"nofollow noopener\" target=\"_blank\">grow increasingly polluted, fish become more likely to contain harmful substances such as heavy metals or pesticides<\/a>. Fish are thus a \u201cbundled\u201d product: the same tilapia that provides essential nutrients might also carry a health risk. This creates a dilemma. Consumers face a difficult trade-off.<\/p>\n<p>Vendors increasingly use <a href=\"https:\/\/doi.org\/10.1016\/j.foodpol.2009.12.005\" rel=\"nofollow noopener\" target=\"_blank\">labels and nutritional guidelines to help consumers \u201csee inside the fish\u201d<\/a>, to consider both nutrient benefits and contamination risks. But even if we know the exact levels of every nutrient and toxin, how do we weigh those trade-offs? Which matters more? This complexity is difficult to communicate effectively.<\/p>\n<p>One problem is that, depending on individual background and cumulative intake, the prospective gains from nutrient intake or risks from ingesting contaminants may vary.<\/p>\n<p>Another challenge is that how we resolve this trade-off can change throughout our lives. At one point our choices will be self-motivated, at another, we will have our children in mind, or pregnancy or a health condition will come into consideration. The balance between benefit and risk shifts in relation to these and other life situations.<\/p>\n<p>Past experience shows how difficult this balance can be. A warning issued in the United States about mercury in <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0095069606000957?via%3Dihub\" rel=\"nofollow noopener\" target=\"_blank\">fish targeted at pregnant women also led many other, not-at-risk consumers to reduce their own fish intake \u2013 losing important nutritional benefits.<\/a><\/p>\n<p>To better understand how the information communicated in labels affects consumer choices about these trade-offs, our <a href=\"https:\/\/doi.org\/10.1016\/j.foodpol.2026.103120\" rel=\"nofollow noopener\" target=\"_blank\">international research team ran an experiment with fish consumers<\/a> in communities around <a href=\"https:\/\/theconversation.com\/fish-is-good-food-and-demand-outstrips-supply-in-kenya-how-to-produce-more-and-get-it-to-market-safely-266104\" rel=\"nofollow noopener\" target=\"_blank\">Lake Victoria in Kenya<\/a>.<\/p>\n<p>Kenya\u2019s fish markets: a microcosm of a global challenge<\/p>\n<p>Fish is both an important <a href=\"https:\/\/doi.org\/10.1016\/j.worlddev.2024.106819\" rel=\"nofollow noopener\" target=\"_blank\">source of income and a regular part of diets<\/a> in western Kenya: 93% of our participants had eaten fish in the past week, making it an ideal environment for studying real-world decisions.<\/p>\n<p>Add to that the fact that the lake is under pressure. As in many aquatic environments around the world, runoff from farms and wastewater fuel harmful <a href=\"https:\/\/theconversation.com\/sea-foam-reveals-a-lot-about-the-health-of-a-beachs-ecosystem-heres-how-to-spot-polluted-surf-282164\" rel=\"nofollow noopener\" target=\"_blank\">algal blooms<\/a>, <a href=\"https:\/\/theconversation.com\/lake-victoria-is-turning-green-the-deadly-bacteria-behind-it-249298\" rel=\"nofollow noopener\" target=\"_blank\">dense green layers that spread across the water<\/a>. In the wake of these blooms, bacteria produce toxins, known as microcystins.<\/p>\n<p><a href=\"https:\/\/www.ecologyandsociety.org\/vol28\/iss1\/art49\/%7D\" rel=\"nofollow noopener\" target=\"_blank\">Microcystins<\/a> are harmful to humans when absorbed in too-high amounts through drinking water or fish tissue. <a href=\"https:\/\/cdn.who.int\/media\/docs\/default-source\/wash-documents\/wash-chemicals\/microcystins-background-201223.pdf?sfvrsn=6d60aa6d_3\" rel=\"nofollow noopener\" target=\"_blank\">Maximum intake guideline values set by the World Health Organization (WHO) exist for one cyanobacterial toxin, microcystin-LR, with stricter thresholds for, e.g. children<\/a>.<\/p>\n<p>In our <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0306919226000874\" rel=\"nofollow noopener\" target=\"_blank\">experiment<\/a>, participants were asked to choose between different hypothetical fish purchase options. Each option came with simple labels showing nutrient levels (healthy fats) and toxin levels: low, medium or high.<\/p>\n<p>This allowed us to analyse how people weigh up these trade-offs when both benefits and risks are known and clearly communicated.<\/p>\n<p>What we found<\/p>\n<p>At the individual level, our results are reassuring. Most consumers show careful consideration for both nutrient and toxin labels. But they react more strongly to warnings about risk than to information about benefits. In other words, potential harm weighed more heavily than potential gain. This matters. If risk warnings dominate too strongly, people may avoid fish altogether. This highlights the importance of complementing risk guidance with information on benefits in cases of bundled products, like fish, where a nuanced, balanced response is preferable over a large avoidance reaction that may crowd out essential nutrient intake.<\/p>\n<p>Our <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0306919226000874\" rel=\"nofollow noopener\" target=\"_blank\">study<\/a> also shows that participants\u2019 reactions are more than just the sum of the \u201cnutrient and the contaminant equation\u201d, and indicates that consumers do not treat nutrients and contaminants as two separate factors that can simply offset each other. If a <a href=\"https:\/\/theconversation.com\/good-for-your-health-and-the-environment-why-we-should-be-eating-oily-fish-228140\" rel=\"nofollow noopener\" target=\"_blank\">fish is high in nutrients<\/a>, this does not simply cancel out higher contamination levels.<\/p>\n<p>Instead, the two are evaluated together: benefits matter less when risks are higher. This seems rational, given that a balanced diet would be characterised by a good status in both dimensions. And it suggests that the two labels could support each other rather than compete for limited attention.<\/p>\n<p>A hidden inequality<\/p>\n<p>While many participants made nuanced choices, not everyone responded in the same way.<\/p>\n<p>Some consumers paid close attention to both nutrients and contaminants. Others responded much less to either type of information. These less responsive consumers were more likely to have lower incomes, less education, or were less awareness of <a href=\"https:\/\/theconversation.com\/delving-into-one-healths-vision-to-better-protect-people-animals-and-the-planet-from-future-health-crises-280223\" rel=\"nofollow noopener\" target=\"_blank\">environmental risks<\/a>. Those groups are often already more vulnerable and less healthy.<\/p>\n<p>This raises a broader concern at the societal level.<\/p>\n<p>If more responsive consumers begin avoiding certain fish, prices for those fish might fall, reflecting lower demand. This could make unhealthier fish more affordable \u2013 and therefore more attractive \u2013 for less information-responsive consumers. In that case, health risks could become concentrated among the already disadvantaged. In other words, better information might not automatically lead to better outcomes for everyone. To what degree this occurs in practice remains a matter for further research.<\/p>\n<p>What can be done?<\/p>\n<p>Helping consumers navigate these trade-offs starts with whether, and how, credible information is presented.<\/p>\n<p>Researchers are working to uncover a systematic relationship between observable fish traits \u2013 such as species or size \u2013 and nutrient or contaminant levels. While fish-specific labelling will most likely remain out of reach, such systematic links could be used to support simple guidance for consumers\u2019 choices.<\/p>\n<p>Overall, many consumers display nuanced, highly rationally justifiable choices when the benefits and risks appear side-by-side.<\/p>\n<p>Our results support trusting consumers to make nuanced decisions in line with their own specific needs and concerns. But the findings also underscore that nutritional information campaigns need to concentrate on communicating both sides of the coin \u2013 and to be vigilant concerning distributional hazards.<\/p>\n<p>But the burden shouldn\u2019t fall only on consumers and on those who oversee labelling.<\/p>\n<p>The difficult trade-offs people face at the market are rooted in environmental pollution problems. Pollution reduces the quality of fish as food, and burdens consumers with increasingly difficult choices. Reducing environmental pollution is therefore essential \u2013 not only for ecosystems, but for <a href=\"https:\/\/theconversation.com\/why-developing-nations-could-be-the-first-to-suffer-as-the-middle-east-conflict-raises-food-prices-278164\" rel=\"nofollow noopener\" target=\"_blank\">food security<\/a>.<\/p>\n<p>This article was co-written with Christopher B.
