{"id":96101,"date":"2025-10-24T19:55:08","date_gmt":"2025-10-24T19:55:08","guid":{"rendered":"https:\/\/www.newsbeep.com\/il\/96101\/"},"modified":"2025-10-24T19:55:08","modified_gmt":"2025-10-24T19:55:08","slug":"bryan-ford-on-bread-culture-and-the-craft-of-curiosity","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/il\/96101\/","title":{"rendered":"Bryan Ford on Bread, Culture, and the Craft of Curiosity"},"content":{"rendered":"<p>Roots and Rising<\/p>\n<p>Baking entered his life almost by accident. \u201cI started baking King Cakes,\u201d he said. \u201cSelling them during the parades of Mardi Gras.\u201d He was 18 or 19 at the time. \u201cThat was kind of my transition from cook to baker,\u201d he said. \u201cIt was unique to bake fresh bread\u2014fresh iconic bread\u2014because people are used to getting it from the supermarket.\u201d<\/p>\n<p>He earned his accounting degree and worked as a CPA, but baking never stopped. \u201cEvery single day I was just going home from work and baking,\u201d he said. \u201cI didn\u2019t have social media. I was just doing it for myself.\u201d In those early years he became obsessed with technique. \u201cI was perfecting croissants and perfecting baguettes,\u201d he said. \u201cThat\u2019s what I would do every single day.\u201d<\/p>\n<p>By 2016, Ford had reached a breaking point with accounting. \u201cI was kind of fed up with being an accountant,\u201d he said. \u201cI quit, and I moved to Miami.\u201d There, a friend encouraged him to start a bakery. \u201cHe was like, \u2018Yo, move here, open a bakery or something.\u2019 And I was like, bet.\u201d Miami became his laboratory. \u201cI started making sourdough like crazy,\u201d he said. \u201cIt turned into that obsession.\u201d<\/p>\n<p>At the time, Zach the Baker was one of the few names in town. \u201cHe was really the only game in town,\u201d Ford said. \u201cI was really inspired by his work.\u201d Ford began popping up at coffee shops and farmers markets and doing small wholesale runs. He also began documenting his process online. \u201cI started blogging about my bread\u2014my pan de coco, coconut breads, Caribbean Latin American breads with sourdough\u2014and that took off,\u201d he said.<\/p>\n<p>That blog, Artisan Bryan, became the foundation for everything that followed. \u201cIt turned into the media career,\u201d he said. \u201cThe reason I didn\u2019t open a bakery in Miami is because the media career just kind of skyrocketed.\u201d<\/p>\n<p>He had already spent years in kitchens honing his craft. \u201cI worked at a lot of bakeries along the way,\u201d he said. \u201cI worked at bagel shops.
