{"id":287721,"date":"2026-02-17T04:20:07","date_gmt":"2026-02-17T04:20:07","guid":{"rendered":"https:\/\/www.newsbeep.com\/nz\/287721\/"},"modified":"2026-02-17T04:20:07","modified_gmt":"2026-02-17T04:20:07","slug":"flakely-bakery-a-gluten-free-pastry-spot-opens-in-bryn-mawr","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/nz\/287721\/","title":{"rendered":"Flakely Bakery, a gluten-free pastry spot, opens in Bryn Mawr"},"content":{"rendered":"<p class=\"inq-p text-primary  \">Gluten-free bakery Flakely has opened its doors in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/bryn-mawr\" rel=\"nofollow noopener\" target=\"_blank\">Bryn Mawr<\/a>, bringing its signature pastries to the <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/main-line\" rel=\"nofollow noopener\" target=\"_blank\">Main Line<\/a> after five years of doing business out of a commercial kitchen in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/manayunk\" rel=\"nofollow noopener\" target=\"_blank\">Manayunk<\/a>. The cross-river move marks a major expansion for Flakely, which, for years, has sold most of its pastries in a frozen take-and-bake form because of space constraints. <\/p>\n<p class=\"inq-p text-primary  \">Now, Flakely is giving Main Line customers a rare opportunity to buy fresh gluten-free baked goods, namely its acclaimed croissants, which are a notoriously difficult item to make without gluten.<\/p>\n<p class=\"inq-p text-primary  \">Flakely\u2019s new Bryn Mawr headquarters is located at 1007 W. Lancaster Ave. in the former Grand Middle East hookah lounge (though one would never guess the storefront\u2019s previous identity given all of the pastel pink decor that now adorns the walls). <\/p>\n<p class=\"inq-p text-primary  \">On the morning of Flakely\u2019s soft opening last week, bakery staff bustled around the open concept kitchen. A glass display case of treats, including sweet and savory croissants and elegantly decorated cupcakes, shimmered in the early morning light. <\/p>\n<p class=\"inq-p text-primary  \">The move to the Main Line is \u201ca homecoming\u201d of sorts for owner Lila Colello, who grew up in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/ardmore\" rel=\"nofollow noopener\" target=\"_blank\">Ardmore<\/a> and attended the Shipley School. <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/food\/flakely-gluten-free-bakery-bryn-mawr-20251230.html\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.inquirer.com\/food\/flakely-gluten-free-bakery-bryn-mawr-20251230.html\">Colello worked her way up in Philadelphia\u2019s dessert world<\/a>, staging at the Ritz Carlton and serving as a pastry chef at Wolfgang Puck Catering. When she was diagnosed with celiac disease, an inflammatory autoimmune disorder triggered by eating gluten, in 2010, she feared her days in the pastry world were numbered.<\/p>\n<p class=\"inq-p text-primary  \">But instead, Colello <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/food\/flakely-gluten-free-bakery-bryn-mawr-20251230.html\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.inquirer.com\/food\/flakely-gluten-free-bakery-bryn-mawr-20251230.html\">mastered the art of the gluten-free pastry<\/a>. She started Flakely in 2017 as a wholesale operation and moved into the commercial kitchen in Manayunk in 2021. <\/p>\n<p class=\"inq-p text-primary  \">Flakely was voted <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/10best.usatoday.com\/awards\/flakely-gluten-free-philadelphia-pennsylvania\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/10best.usatoday.com\/awards\/flakely-gluten-free-philadelphia-pennsylvania\/\">one of the best gluten-free bakeries<\/a> in the country in 2024 by USA Today, and Inquirer restaurant critic Craig Laban <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/food\/craig-laban\/best-gluten-free-bakeries-bread-pastries-dessert-philadelphia.html\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.inquirer.com\/food\/craig-laban\/best-gluten-free-bakeries-bread-pastries-dessert-philadelphia.html\">said<\/a> Colello had \u201cfound the secret\u201d to making laminated pastry, like croissants. <\/p>\n<p class=\"inq-p text-primary  \">The Manayunk kitchen helped put Flakely on the map, but it also constrained Colello. Because there was so little foot traffic, Flakley couldn\u2019t make fresh goods for fear of having to throw out large quantities at the end of the day. <\/p>\n<p class=\"inq-p text-primary  \">Colello\u2019s new storefront has given her the space to hire a larger staff, expand her fresh pastry offerings, and give patrons a true bakery experience. <\/p>\n<p class=\"inq-p text-primary  \">\u201cI don\u2019t know another place, maybe outside of New York, that has gluten-free croissants that you can even have fresh,\u201d Colello said. <\/p>\n<p class=\"inq-p text-primary  \">\u201cIt\u2019s a totally different experience,\u201d she added. <\/p>\n<p class=\"inq-p text-primary  \">Demand for gluten-free goods is high in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/lower-merion\" rel=\"nofollow noopener\" target=\"_blank\">Lower Merion<\/a>, Colello said. Many Main Line patrons used to make the trek to Manayunk to buy Colello\u2019s take-and-bake goods and are happy to have a gluten-free option closer to home. <\/p>\n<p class=\"inq-p text-primary  \">Flakely joins a small contingent of gluten-free bakeries in the Philly suburbs, including <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.thehappymixer.com\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.thehappymixer.com\/\">The Happy Mixer<\/a>, which has locations in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/wayne\" rel=\"nofollow noopener\" target=\"_blank\">Wayne<\/a>, Chalfont, and Newtown, and <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.instagram.com\/lainesgfbakery\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.instagram.com\/lainesgfbakery\/\">Laine\u2019s Gluten Free Bakery<\/a> in <a class=\"relative z-1 text-blue-mid hover:shadow-lightmode\" data-link-type=\"article-body\" href=\"https:\/\/www.inquirer.com\/topic\/berwyn\" rel=\"nofollow noopener\" target=\"_blank\">Berwyn<\/a>. <\/p>\n<p class=\"inq-p text-primary  \">Colello said Flakely is still figuring out its hours, but she plans to be open from 10 a.m. to 3 p.m., Tuesday through Friday, and from 10 a.m. to 2 p.m. on Saturday.
