It may take more time and effort to turn them into a meal, but learning how to stretch a grocery budget is an important skill everyone should develop.<\/p>\n<p id=\"anchor-a602fb\" class=\"body-graf\">McWhorter, a spokesperson for the Academy of Nutrition and Dietetics, previously shared with TODAY.com some of the <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/cheap-healthy-foods-rcna243256\" target=\"_blank\" rel=\"nofollow noopener\">healthiest and cheapest foods<\/a> to keep stocked.<\/p>\n<p id=\"anchor-43e83c\" class=\"body-graf\">Here&#8217;s his favorite $2 pantry staple that&#8217;s rich in fiber, protein and other nutrients.<\/p>\n<p>Dietitian Tip of the Day: Stock Up on Dried Beans <\/p>\n<p id=\"anchor-4fd72f\" class=\"body-graf\">Dried beans are one of the most nutrient-dense, cost-effective foods you can buy, says McWhorter. These shelf-stable legumes are versatile and offer a range of beneficial nutrients.<\/p>\n<p id=\"anchor-56b7e5\" class=\"body-graf\">Compared with canned beans, dried beans can stretch further and are a fraction of the price, McWhorter notes.<\/p>\n<p id=\"anchor-26646a\" class=\"body-graf\">A standard one-pound bag of beans costs, on average, $1-2. If one serving is a quarter cup dried and each bag yields 12 servings, that works out to around 10\u201315 cents per serving.<\/p>\n<p id=\"anchor-3cbacc\" class=\"body-graf\">Beans will provide a hefty dose of gut-healthy fiber and high-quality plant protein to keep you full and energized.<\/p>\n<p id=\"anchor-ab5025\" class=\"body-graf\">Some of the <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/healthiest-beans-legumes-rcna148276\" target=\"_blank\" rel=\"nofollow noopener\">healthiest beans<\/a> are black beans, white beans, garbanzo beans (chickpeas) and kidney beans.<\/p>\n<p>Why It Matters<\/p>\n<p id=\"anchor-a6915a\" class=\"body-graf\">We should probably all be eating more beans. These nutrient-dense legumes are good for our bodies, wallets and the earth.<\/p>\n<p id=\"anchor-cec83b\" class=\"body-graf\">Beans are best known for their fiber content. Most varieties pack 5\u20139 grams per serving, TODAY.com previously reported. They&#8217;re rich in both soluble and insoluble fiber, which offer impressive benefits. These include lowering cholesterol, stabilizing blood sugar, preventing constipation and supporting our microbiome.<\/p>\n<p id=\"anchor-6f0167\" class=\"body-graf\">\u201cBeans can dramatically cut costs while improving heart health,\u201d McWhorter says.<\/p>\n<p id=\"anchor-b092be\" class=\"body-graf\">Most <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/high-protein-beans-rcna203021\" target=\"_blank\" rel=\"nofollow noopener\">beans<\/a> provide, on average, 8 grams of protein per serving. The <a href=\"https:\/\/ask.usda.gov\/s\/article\/Why-are-cooked-dried-beans-and-dried-peas-in-both-the-Protein-Foods-Group-and-the-Vegetable-Group\" target=\"_blank\" rel=\"nofollow noopener\">U.S. Department of Agriculture<\/a> uniquely classifies beans in both the &#8220;vegetables&#8221; group and the \u201cprotein foods\u201d group, along with meat.<\/p>\n<p id=\"anchor-74676a\" class=\"body-graf\">Plus, beans are rich in vitamins and minerals, like iron, folate and potassium.<\/p>\n<p id=\"anchor-2617e0\" class=\"body-graf\">Eating beans may be good for longevity, too \u2014 fun fact, the <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/longest-living-family-blue-zones-diet-recipe-rcna136406\" target=\"_blank\" rel=\"nofollow noopener\">world&#8217;s longest-living family<\/a> eats three-bean soup every day.<\/p>\n<p>How to Get Started<\/p>\n<p id=\"anchor-3391a9\" class=\"body-graf\">You can find bags of dried beans in any supermarket. Buying in bulk may save you more in the long run, McWhorter notes.<\/p>\n<p id=\"anchor-14f581\" class=\"body-graf\">Always put dried beans in an airtight container and keep them in a cool, dark place. When stored properly, dried beans basically have an &#8220;indefinite shelf life,&#8221; says McWhorter. (They won&#8217;t last forever but up to several years.)<\/p>\n<p id=\"anchor-2985ee\" class=\"body-graf\">When you&#8217;re ready to eat, portion the beans out and soak them overnight in water.
