Simone Castillo and Edward Villatoro took over the Bridge Storefront that had\u00a0briefly\u00a0been Nelly\u2019s Empanadas and established Green Eats, specializing in smoothies, bowls and more quick-serve options.<\/p>\n<p>&#8220;We wanted to serve real food, no junk,&#8221; Castillo said.\u00a0<\/p>\n<p>She acknowledged that &#8220;healthy&#8221; is a moving target in a world where spinach, T-bone steaks, protein powder and fasting all fit someone\u2019s definition of the term. Credit: Newsday\/Erica Marcus<\/p>\n<p>While their kitchen is not 100% organic, they are guided in their purchasing by the annual &#8220;dirty dozen&#8221; list, published by the nonprofit Environmental Working Group, that identifies the vegetables bearing the highest pesticide load \u2014 spinach, kale-collards-mustard greens, strawberries, grapes, nectarines, peaches, cherries, apples, blackberries, pears, potatoes and blueberries \u2014 even though they are more expensive.<\/p>\n<p>Castillo&#8217;s mother is a professional cook;\u00a0Villatoro\u2019s father is the second-generation owner of <a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/mexican-colombian-food-restaurants-long-island-g45227\" rel=\"nofollow noopener\" target=\"_blank\">El Tazumel, the Glen Cove eatery<\/a> that is Long Island\u2019s OG Salvadoran restaurant.
