The negative effects they have on <a href=\"https:\/\/www.nbcnews.com\/health\/heart-health\/ultraprocessed-foods-linked-higher-risk-heart-disease-death-n1011651\" target=\"_blank\" rel=\"nofollow noopener\">heart health<\/a> and <a href=\"https:\/\/www.nbcnews.com\/health\/health-news\/eating-food-additives-together-may-increase-diabetes-risk-study-sugges-rcna200163\" target=\"_blank\" rel=\"nofollow noopener\">diabetes risk<\/a> is well-established.  <\/p>\n<p id=\"anchor-dee634\" class=\"body-graf\">\u201cWhat is not so well-known is that diet also has a significant impact on musculoskeletal health,\u201d said Dr. Thomas Link, chief of the musculoskeletal imaging section at the University of California San Francisco and the senior author of the study. <\/p>\n<p id=\"anchor-2ad67a\" class=\"body-graf\">Muscles store fat in two ways: in \u201cstreaks\u201d of fat that sit between healthy muscles, called intermuscular fat, and in droplets stored in muscle fibers, called intramuscular fat. <\/p>\n<p id=\"anchor-b21907\" class=\"body-graf\">Everyone, regardless of weight or physical ability, has some of both types, but you typically won\u2019t find thick streaks of intermuscular fat in extreme athletes, said Christopher Fry, co-director of the Center for Muscle Biology at the University of Kentucky.<\/p>\n<p id=\"anchor-523311\" class=\"body-graf\">The difference is due to how the body uses fat in the muscles, said Fry, who wasn\u2019t involved with the new research. In athletes, fat stored in muscle \u2014 predominantly in muscle fiber droplets \u2014 is an important energy reserve that the body taps into when a person exerts an extraordinary amount of energy. When those energy reserves aren\u2019t being used or a person has a metabolic disease such as Type 2 diabetes, fat begins to build up, particularly in streaks between the muscles.<\/p>\n<p id=\"anchor-a8803e\" class=\"body-graf\">\u201cEveryone had a little bit of fat between their muscles, but any expansion is going to not be good,\u201d Fry said. <\/p>\n<p id=\"anchor-eaec44\" class=\"body-graf\">In familiar terms, \u201cwe want a sirloin steak, not a ribeye,\u201d he said, referring to one notoriously lean and another commonly marbled, fatty cut of beef. <\/p>\n<p id=\"anchor-6df852\" class=\"body-graf\">To study diet\u2019s effects on muscular fat, Link and his team looked at data from 615 people with an average age of 60 enrolled in the National Institute of Arthritis and Musculoskeletal and Skin Diseases\u2019 <a href=\"https:\/\/www.niams.nih.gov\/grants-funding\/funded-research\/osteoarthritis-initiative\" target=\"_blank\" rel=\"nofollow noopener\">Osteoarthritis Initiative<\/a>. Higher levels of intermuscular fat are a risk factor for <a href=\"https:\/\/www.nbcnews.com\/health\/health-news\/semaglutide-linked-reduced-arthritis-knee-pain-people-obesity-study-fi-rcna177849\" target=\"_blank\" rel=\"nofollow noopener\">knee osteoarthritis<\/a>, Link said. Everyone in the database was at risk of knee osteoarthritis when they enrolled, either because they had obesity, they were overweight or they had knee injuries. <\/p>\n<p id=\"anchor-5ae204\" class=\"body-graf\">Fat build-up in muscles changes muscular structure and alters how muscles exert force, Fry said. That changes how the knees absorb the force of the thigh muscles moving the legs, which can break down cartilage and lead to arthritis, he said.<\/p>\n<p id=\"anchor-22130c\" class=\"body-graf\">The researchers analyzed everyone\u2019s body mass index and what they ate and MRI scans of their thighs, which showed how much fat each person\u2019s muscles stored. In total, about 65% of the people in the study were overweight, and about 24% had obesity. However, the MRI scans revealed that regardless of people\u2019s BMI, how many calories they ate and how much they exercised, people who ate diets that were high in ultraprocessed foods had more fat streaked through their muscles. <\/p>\n<p id=\"anchor-0b4fee\" class=\"body-graf\">More research is still needed to establish cause and effect; that is, whether eating a lot of ultraprocessed foods leads to more intramuscular fat. <\/p>\n<p id=\"anchor-ef8578\" class=\"body-graf\">\u201cWe thought maybe it was just obesity or belly fat, which you get with high caloric intake. But it was more than that,\u201d Link said. <\/p>\n<p id=\"anchor-d7ee8b\" class=\"body-graf\">Protein is a key macronutrient the body needs to build and maintain muscle, but <a href=\"https:\/\/www.frontiersin.org\/journals\/nutrition\/articles\/10.3389\/fnut.2021.746880\/full\" target=\"_blank\" rel=\"nofollow noopener\">omega-3 fatty acids<\/a> and <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC7943415\/\" target=\"_blank\" rel=\"nofollow noopener\">iron<\/a> are also critical. Ultraprocessed foods are often high in calories and low in vitamins, minerals and nutrients needed to maintain muscle health, Link said. <\/p>\n<p id=\"anchor-0712e9\" class=\"body-graf\">Dr. Tamiko Katsumoto, a clinical associate professor of immunology and rheumatology at Stanford University, said that if ultraprocessed foods are proven to cause fat build-up in muscles, the phenomenon most likely isn\u2019t unique to the thighs. Neither are the health implications, she said. \u201cKnee function and stability comes from having strong leg muscles,\u201d she said. \u201cBut when other muscles store fat, it can cause other issues, too.\u201d<\/p>\n<p id=\"anchor-62a6c7\" class=\"body-graf\">A <a href=\"https:\/\/academic.oup.com\/eurheartj\/advance-article\/doi\/10.1093\/eurheartj\/ehae827\/7958241?__cf_chl_tk=CxvIW8SLy9I6mh0oA.W__3b552UjwnHQLLXtXbzbzUA-1776104221-1.0.1.1-PB91K18GADM.zewRpPE2Y4LMmnb4OXhvIHMpnWZ1vaI\" target=\"_blank\" rel=\"nofollow noopener\">study published last year<\/a> found that each 1% increase in muscular fat raised a person\u2019s risk of cardiovascular disease by 7%. <a href=\"https:\/\/www.nature.com\/articles\/s41574-022-00784-2\" target=\"_blank\" rel=\"nofollow noopener\">Studies have also linked<\/a> more intramuscular fat with a higher risk of Type 2 diabetes.
