{"id":383439,"date":"2026-04-17T01:35:08","date_gmt":"2026-04-17T01:35:08","guid":{"rendered":"https:\/\/www.newsbeep.com\/nz\/383439\/"},"modified":"2026-04-17T01:35:08","modified_gmt":"2026-04-17T01:35:08","slug":"scientists-reveal-why-bread-can-cause-weight-gain-without-overeating-sciencealert","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/nz\/383439\/","title":{"rendered":"Scientists Reveal Why Bread Can Cause Weight Gain Without Overeating : ScienceAlert"},"content":{"rendered":"<p>New research in mice shows how <a href=\"https:\/\/www.sciencealert.com\/wholemeal-or-wholegrain-an-expert-explains-how-to-choose-your-bread\" rel=\"nofollow noopener\" target=\"_blank\">eating bread<\/a> can cause body weight and fat mass to increase, even though caloric intake stays at a similar level.<\/p>\n<p>The research, led by a team from Osaka Metropolitan University in Japan, highlights how carbohydrates can contribute to <a href=\"https:\/\/www.sciencealert.com\/youll-probably-gain-a-pound-in-2025-avoid-weight-creep-with-7-practical-steps\" rel=\"nofollow noopener\" target=\"_blank\">weight gain<\/a> as well as excessive fat intake \u2013 which is what <a href=\"https:\/\/www.who.int\/news\/item\/17-07-2023-who-updates-guidelines-on-fats-and-carbohydrates\" rel=\"nofollow noopener\" target=\"_blank\">dietary advice<\/a> tends to focus on.<\/p>\n<p>This isn&#8217;t the first time nutritionists have talked about <a href=\"https:\/\/www.sciencealert.com\/is-a-low-carb-diet-so-much-better-for-weight-loss-a-new-review-brings-the-evidence\" rel=\"nofollow noopener\" target=\"_blank\">bread and carbohydrates<\/a> and their contribution to weight gain, but there hasn&#8217;t been much detailed research into the relationship \u2013 especially wheat flour \u2013 or into what might be happening at a metabolic level.<\/p>\n<p>The team discovered that eating more wheat bread was associated with reduced <a href=\"https:\/\/www.sciencealert.com\/think-your-metabolism-runs-fast-the-science-may-surprise-you\" rel=\"nofollow noopener\" target=\"_blank\">energy expenditure<\/a>, pushing the metabolism towards a state where fat storage is prioritized, even when the calories in a diet stay at a similar level.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/nz\/wp-content\/uploads\/2026\/04\/WeightChart.jpg\" alt=\"Weight chart\" width=\"642\" height=\"252\" class=\"wp-image-198199 size-full\"   loading=\"lazy\"\/>The researchers analyzed the difference that bread in the diets of mice had on their weight (A) and fat tissue (B, C). Food Res., 2026)<\/p>\n<p>&#8220;These findings suggest that weight gain may not be due to wheat-specific effects, but rather to a strong preference for carbohydrates and the associated metabolic changes,&#8221; <a href=\"https:\/\/www.omu.ac.jp\/en\/info\/research-news\/entry-108581.html\" rel=\"nofollow noopener\" target=\"_blank\">says<\/a> nutritionist Shigenobu Matsumura of Osaka Metropolitan University.<\/p>\n<p>The researchers set up experiments in which lab mice were given a choice between their normal, healthy cereal-based diet and either <a href=\"https:\/\/www.sciencealert.com\/does-freezing-bread-make-it-any-healthier-for-you-an-expert-explains\" rel=\"nofollow noopener\" target=\"_blank\">simple bread<\/a>, baked wheat flour, or baked rice flour. The mice were then monitored to check their weight and how their bodies burned calories at rest and when active.<\/p>\n<p>Using blood samples, the study team also examined hormone, blood sugar, and metabolite levels in the animals, while post-experiment tissue analyses assessed gene expression in the liver.<\/p>\n<p>The experiments showed that the mice strongly preferred to switch from their standard diet to carbohydrate-heavy snacks, which then led <a href=\"https:\/\/www.sciencealert.com\/menopausal-weight-gain-starts-sooner-than-youd-think-heres-how-to-act-early\" rel=\"nofollow noopener\" target=\"_blank\">to weight gain<\/a> and more fat tissue in the mice, particularly in the males.<\/p>\n<p>Further analysis and follow-up tests suggested that these two key changes were being driven not by overeating or a <a href=\"https:\/\/www.sciencealert.com\/exercise-can-protect-your-joints-heres-what-you-should-try\" rel=\"nofollow noopener\" target=\"_blank\">lack of exercise<\/a>, but by the foods themselves. In the wheat flour diet, fewer calories were being burned overall, while genes responsible for turning carbohydrates into fat were activated.<\/p>\n<p><a href=\"https:\/\/www.sciencealert.com\/newsletter?utm_source=promo_generic_health\" rel=\"nofollow noopener\" target=\"_blank\"><img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/nz\/wp-content\/uploads\/2026\/03\/1774966268_752_Generic-Health-Promo-Final-642x273.jpg\" alt=\"Subscribe to ScienceAlert's free fact-checked newsletter\" width=\"642\" height=\"273\" class=\"alignnone wp-image-182810 size-medium\"   loading=\"lazy\"\/><\/a><\/p>\n<p>Another follow-up test focusing on the wheat flour group showed that when the chow diet was restored, the weight gain stopped, and the metabolic shifts were reversed.<\/p>\n<p>&#8220;In the future, we hope this will serve as a scientific foundation for achieving a balance between &#8216;taste&#8217; and &#8216;health&#8217; in the fields of nutritional guidance, food education, and food development,&#8221; <a href=\"https:\/\/www.omu.ac.jp\/en\/info\/research-news\/entry-108581.html\" rel=\"nofollow noopener\" target=\"_blank\">says<\/a> Matsumura.<\/p>\n<p>The findings are more evidence of how what we eat can cause changes in how our body processes food and <a href=\"https:\/\/www.sciencealert.com\/exercise-doesnt-burn-as-many-calories-as-you-think-experts-say\" rel=\"nofollow noopener\" target=\"_blank\">burns the calories<\/a> it contains. In the case of bread, it seems to slow down the body&#8217;s metabolic engine.<\/p>\n<p>One limitation of the study is that it used mouse models, rather than human volunteers. While it&#8217;s likely that similar processes are happening in people, it&#8217;s not certain \u2013 so that&#8217;s something future studies can pick up.<\/p>\n<p>The researchers also want to experiment with a broader selection of foods to identify what exactly it is about bread that causes this reaction.<\/p>\n<p>No diet study like this exists in isolation, of course.
