Preparing a quick, tasty and nutritious snack can prove challenging, particularly when you’re looking for variety. The majority of home cooks reach for avocado on toast, and when additional protein is needed, a fried egg is added on top.

While avocados are brimming with beneficial fats, fibre and vitamins, the extra carbohydrates from toast can leave you feeling bloated and lethargic.

If you want something quick yet wholesome, we recommend trying stuffed avocados. A culinary expert at Good Food revealed that incorporating spicy beans and feta will transform the green fruit.

They explained: “This super speedy meal is packed with vegetarian sources of protein-top creamy avocados with spicy kidney beans and crumbled cheese.”

Ingredients½ teaspoon of cumin seeds210g can red kidney beansOne large limeThree tomatoesOne banana shallotOne green chilliA handful of coriander85g fetaOne large or two small avocadosMethod

To start, lightly toast cumin seeds in a small pan, then combine them with beans, lime zest and juice, tomatoes, shallot, chilli and coriander in a large bowl.

Next, crumble in the feta and gently fold everything together. Spoon the mixture generously onto avocado halves, garnish with additional coriander leaves, and complete the dish with a squeeze of lime wedges.

Alternatively, if you fancy a savoury option on a warm piece of toast but would rather avoid avocados, then tomato confit is an excellent choice. According to culinary experts, replacing avocado with this spread produces a “savoury-sweet” delight that’s “jammy,” deeply satisfying, and bursting with flavour.

A chef at the Mediterranean Dish shared, “This confit tomato recipe is inspired by the tradition of preserving summer’s bounty.

“This gentle method not only concentrates the flavour of the tomatoes, but also preserves their soft, silky texture and infuses the oil with tomato essence and those of garlic and herbs. The oil itself becomes just as delicious as the tomatoes!”

This recipe, courtesy of the Mediterranean Dish, is designed to serve up to eight people or yield three cups. The preparation time is just 10 minutes, though it requires two hours of cooking on a low heat — but the end result is absolutely worth the wait.
