They\u2019re linked to obesity, food addiction, and even dementia. But a new study challenges the idea that all UPFs are equally harmful. In fact, it suggests that how we think about food may be just as important as what it\u2019s made of.<\/p>\n<p>We love food\u2014but why do we overeat?<\/p>\n<p>UPFs like crisps, ready meals, and fizzy drinks are often blamed for modern health problems. They\u2019re described as addictive, overly palatable, and engineered to keep us eating. But is it the food itself\u2014or our perception of it\u2014that drives <a href=\"https:\/\/www.futura-sciences.com\/en\/researchers-reveal-an-unexpected-link-between-certain-diets-and-lung-cancer_18668\/\" rel=\"nofollow noopener\" target=\"_blank\">overeating<\/a>?<\/p>\n<p>To find out, researchers studied over 3,000 UK adults and their reactions to more than 400 common foods. Their goal? To separate what people like from what makes them keep eating after they\u2019re full.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2025\/08\/1-1-1024x683.jpeg\" alt=\"\"  \/><\/p>\n<p>Chocolate, biscuits and ice cream top both lists of liked foods and hedonic overeating. (Alamy\/PA)<\/p>\n<p>Participants rated food photos (without brand labels) for taste and \u201cbingeability.\u201d Then researchers cross-referenced those ratings with:<\/p>\n<p>Nutritional info like fat, sugar, and fiber<\/p>\n<p>The food\u2019s UPF status, using the Nova system<\/p>\n<p>People\u2019s perceptions\u2014was it sweet, fatty, processed, or healthy?<\/p>\n<p>The key insight: beliefs matter.<\/p>\n<p>Yes, high-fat, high-calorie foods were more likely to be overconsumed. But so were foods perceived as sweet, rich, or heavily processed\u2014even if they weren\u2019t. On the flip side, foods seen as bitter or fiber-rich were far less likely to trigger hedonic overeating.<\/p>\n<p>In one test, researchers predicted 78% of overeating behavior using just nutrient data and food perceptions. The Nova UPF label? It explained less than 4%.<\/p>\n<p>The UPF label isn\u2019t enough<\/p>\n<p>That\u2019s not to say ultra-processed foods are harmless. Many are calorie-dense and nutrient-poor. But the UPF label lumps everything together\u2014from sugary soft drinks to protein bars and vegan meat alternatives.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/www.newsbeep.com\/uk\/wp-content\/uploads\/2025\/08\/2-2-1024x683.jpeg\" alt=\"\"  \/><\/p>\n<p>Classifying a food as \u2018ultra-processed\u2019 added very little to predictive models. (Getty\/iStock)<\/p>\n<p>Some of these foods can still be part of a <a href=\"https:\/\/www.futura-sciences.com\/en\/a-simple-fix-to-cut-mercury-in-tuna_18643\/\" rel=\"nofollow noopener\" target=\"_blank\">healthy diet<\/a>\u2014especially for older adults, people with dietary restrictions, or anyone needing convenient nutrition. Demonizing them all doesn\u2019t help. In fact, it could backfire by discouraging people from eating foods that are actually beneficial.<\/p>\n<p>Instead of labeling foods as good or bad based on processing, the researchers recommend a smarter approach:<\/p>\n<p>Food literacy: Teach people what makes food satisfying, how to manage cravings, and how to recognize when they\u2019re eating for comfort, not hunger.<\/p>\n<p>Reformulation: Develop products that are enjoyable and filling\u2014rather than ultra-bland diet versions or hyper-palatable snacks.<\/p>\n<p>Understand motivation: People eat for emotional, social, and practical reasons. Helping them replace low-quality habits with better ones starts with understanding those needs.<\/p>\n<p>It\u2019s not about processing\u2014it\u2019s about perception<\/p>\n<p>Yes, some UPFs deserve concern. They\u2019re highly marketed, sold in big portions, and easy to overconsume. But they\u2019re not the root of all dietary evil.<\/p>\n<p>What this study reveals is that eating behavior is complex\u2014driven by both what food contains and what we believe about it. And that belief can shape behavior even more than a <a href=\"https:\/\/www.futura-sciences.com\/en\/whats-the-difference-between-yogurt-and-cottage-cheese_9177\/\" rel=\"nofollow noopener\" target=\"_blank\">nutrition label<\/a>.<\/p>\n<p>So rather than relying on UPF status to shape policy, maybe it\u2019s time to focus on the psychology of food.
