The latest round brings to $63m in total funding raised for Nory, which deploys AI in restaurants\n<\/p>\n
The raise, one of the largest in the hospitality technology sector, takes the overall funding haul of his start-up, Nory, to $63m (\u20ac43.6m) since launching it five years ago.<\/p>\n
Mr Sheridan\u2019s London-based company plans to use the cash to speed up the development of AI assistants across its restaurant management system as well as scaling operations in the US market.<\/p>\n
\u200bThe funding round, which was led by the Swedish investment firm Kinnevik, comes a year after Nory raised a $16m Series A round, led by the US venture capital firm Accel.<\/p>\n
\u200bNory\u2019s AI system covers inventory, payroll and HR. The company claims that it reduces restaurant operating costs by up to 20pc and increases profitability by up to 50pc.<\/p>\n
It also claims to help restaurant operators save over 100 hours of admin per restaurant each month by automating other back office tasks such as business analysis, digital guest engagement, rota planning, procurement and finance.<\/p>\n
Its AI platform, the company says, learns from historical operational and sales data to serve up AI-driven recommendations to frontline staff.<\/p>\n
Nory\u2019s customers in the UK, Ireland and the US include Black Sheep Coffee, the Jamie Oliver Group, the Azzurri Group and Dave\u2019s Hot Chicken.<\/p>\n

Mr Sheridan previously worked at Davy and Accenture before founding his own restaurant franchise, Mad Egg.<\/p>\n
