The resulting product is not only rare, but very expensive \u2013 costing about \u00a3130 for 500g.<\/p>\n<p class=\"dcr-130mj7b\">It is also controversial, with animal welfare experts raising <a href=\"https:\/\/www.theguardian.com\/lifeandstyle\/wordofmouth\/2013\/sep\/13\/civet-coffee-cut-the-crap\" data-link-name=\"in body link\" rel=\"nofollow noopener\" target=\"_blank\">concerns<\/a> that some producers keep civets <a href=\"https:\/\/www.bbc.co.uk\/news\/uk-england-london-24034029\" data-link-name=\"in body link\" rel=\"nofollow noopener\" target=\"_blank\">in battery-style conditions<\/a>.<\/p>\n<p class=\"dcr-130mj7b\">Researchers say they have uncovered new clues as to the coffee\u2019s unusual taste, revealing unroasted beans retrieved from civet poo have differences in their fat content to those from ripe coffee berries manually collected from trees.<\/p>\n<p class=\"dcr-130mj7b\">\u201cWe believe that the way it is fermented in [the] gut make[s] the profile different,\u201d said Dr Palatty Allesh Sinu, a co-author of the study from the Central University of Kerala, India. \u201cThe enzymes and microbiome involved in fermentation [in the civet] [are] different from [the] manual fermentation process.\u201d<\/p>\n<p class=\"dcr-130mj7b\"><a href=\"https:\/\/www.nature.com\/articles\/s41598-025-21545-x\" data-link-name=\"in body link\" rel=\"nofollow noopener\" target=\"_blank\">Writing in the journal Scientific Reports<\/a>, Sinu and colleagues reported how, in January 2025, they collected beans both from wild civet scat as well as trees across five estates in Karnataka, India, that were cultivating robusta coffee.<\/p>\n<p class=\"dcr-130mj7b\">The team then prepared and ground both groups of beans \u2013 although they did not roast them \u2013 before analysing them.<\/p>\n<p class=\"dcr-130mj7b\">\u201cWhen roasted, several heat-sensitive oils and esters can be degraded or changed their profile,\u201d said Sinu.<\/p>\n<p class=\"dcr-130mj7b\">While the team noted that some <a href=\"https:\/\/www.researchgate.net\/publication\/336645917_Chemical_Characteristics_Comparison_of_Palm_Civet_Coffee_Kopi_Luwak_and_Arabica_Coffee_Beans\" data-link-name=\"in body link\" rel=\"nofollow noopener\" target=\"_blank\">previous studies<\/a> had found kopi luwak has a lower protein and caffeine content compared with traditional coffee \u2013 results experts have suggested is <a href=\"https:\/\/www.innovations-report.com\/health-life\/life-sciences\/report-31682\/\" data-link-name=\"in body link\" rel=\"nofollow noopener\" target=\"_blank\">down to the beans<\/a> passing through the civet\u2019s gastrointestinal tract \u2013 no significant differences in protein or caffeine levels were found between the two groups of beans analysed in the new study.<\/p>\n<p class=\"dcr-130mj7b\">However, the beans from civet poo did have a higher fat content, as well as higher levels of two fatty acid methyl esters \u2013 substances based on the building blocks of fats.<\/p>\n<p class=\"dcr-130mj7b\">The team say the results could help explain the taste of kopi luwak.<\/p>\n<p class=\"dcr-130mj7b\">\u201cFat and oils are essential ingredients of flavoured materials,\u201d said Sinu, noting many volatile organic compounds \u2013 substances that help to give aroma and flavour \u2013 use fat as a medium or carrier.<\/p>\n<p class=\"dcr-130mj7b\">Ramit Mitra, the first author of the study, said the two fatty acid-based substances were commonly used in the food industry as flavouring agents and were likely to impart a dairy-like flavour.<\/p>\n<p class=\"dcr-130mj7b\">\u201cHence, we cannot rule out the possibility of these two compounds contributing to the taste profile,\u201d he said.<\/p>\n<p class=\"dcr-130mj7b\">The researchers note there are other important factors that affect the flavour of coffee.<\/p>\n<p class=\"dcr-130mj7b\">\u201cThe core taste of coffee develops mainly from roasting and the chemical alterations that occur during that process.
