What isn&#8217;t so obvious from their appearance is that these nuts have some unique nutritional benefits. In an exclusive interview with Tasting Table, nutritionist Alison Ellis highlighted\u00a0<a href=\"https:\/\/www.tastingtable.com\/1821248\/most-nutritious-nuts-best-to-eat\/\" target=\"_blank\" rel=\"nofollow noopener\">five of the best nuts to eat from a health perspective<\/a>\u00a0\u2013\u00a0and pistachios made the list. &#8220;Pistachios provide healthy fats, fiber, and protein, which support heart health and help regulate blood sugar levels,&#8221; said Ellis. She went on to point out that, &#8220;Pistachios are rich in antioxidants, including lutein and zeaxanthin, which are especially beneficial for eye health.&#8221;\u00a0<\/p>\n<p>Compared to other <a href=\"https:\/\/www.tastingtable.com\/789822\/most-popular-types-of-nuts-explained\/\" target=\"_blank\" rel=\"nofollow noopener\">popular types of nuts<\/a>, pistachios are both lower in calories and higher in protein than most \u2014 second only to almonds for the protein content. Pistachios are also rich in polyphenols\u00a0and tocopherols, antioxidants that prevent cell damage and are linked to a reduced risk of cancer. Eating pistachios has been shown to reduce levels of bad cholesterol in the blood, lower blood pressure, and contribute to the health of your blood vessels. For example, nutritionist Alison Ellis told Tasting Table that she\u00a0enjoys using chopped pistachios as a crunchy coating for fish, but this can be applied to any protein \u2014 be it\u00a0chicken or even tofu.\u00a0The pistachios help to add healthy fats and fiber to lean protein for a more balanced meal.<\/p>\n<p>A <a href=\"https:\/\/diabetesjournals.org\/care\/article-abstract\/37\/11\/3098\/28838\/Beneficial-Effect-of-Pistachio-Consumption-on?redirectedFrom=fulltext\" target=\"_blank\" rel=\"nofollow noopener\">2014 study<\/a> published in the journal, Diabates Care, found that\u00a0pistachios can help to prevent glucose spikes when eaten alongside carbohydrates. That makes them the perfect topping for a <a href=\"https:\/\/www.tastingtable.com\/1168737\/the-base-components-to-create-a-balanced-grain-bowl\/\" target=\"_blank\" rel=\"nofollow noopener\">balanced grain bowl<\/a>, as the fiber from the pistachios can slow the carbohydrate absorption\u00a0while providing that all important crunch.
