If you\u2019re in the high-end hospitality industry, February is\u00a0possibly\u00a0the\u00a0most important month in your work calendar. It\u2019s the month that the world\u2019s most famous\u00a0restaurant\u00a0distinction is handed out to (and taken away<\/a>\u00a0from) a new set of fine dining establishments. We are, of course, talking about Michelin stars<\/a>.<\/p>\n

But did you know those stars aren\u2019t the only Michelin accolade a restaurant can get? There are also the Bib Gourmands<\/a>\u00a0awarded to more affordable eateries, and green stars given to places that are leading the way\u00a0when it comes to\u00a0sustainable gastronomy.\u00a0<\/p>\n

UK restaurants with new Michelin green stars<\/p>\n

These days, there are loads of\u00a0restaurants advertising a \u2018seasonal\u2019 menu featuring foraged goods or responsibly sourced meats, so to get a green star, places have to really go above and beyond. Only a small handful of Green Star restaurants are in big cities \u2013 for instance, while London has far more Michelin stars and Bib Gourmands than any other place in the country, it\u2019s home to just three green starred restaurants.\u00a0<\/p>\n

In total, seven British establishments were\u00a0bestowed with a green star this year, bringing the grand total to 36. Here\u2019s the lowdown.\u00a0<\/p>\n

Timberyard<\/a>, which features on Time Out\u2019s list of the best restaurants in Edinburgh<\/a>, was among the 2026 green star recipients. The fine dining spot already has a Michelin star but had a green star added to its belt thanks to\u00a0its prioritisation of Scottish produce, nose-to-tail\u00a0approach to\u00a0animal products and commitment to preserving ingredients (for example, all its soft drinks are made\u00a0entirely in-house using seasonal, fermented and foraged ingredients).\u00a0<\/p>\n

Another restaurant that now boasts\u00a0two Michelin accolades is 1887 at the Torridon Hotel in the Scottish Highlands, which earned\u00a0both its first Michelin star and\u00a0a green star this month. It stays sustainable by sourcing most of its ingredients from its two-acre kitchen garden and using meat from animals reared on the surrounding estate.<\/p>\n

1887\u00a0also makes every effort to produce as little waste as possible. Michelin said that its inspectors witnessed\u00a0those efforts first-hand\u00a0in a dish that utilised every part of a langoustine caught in the nearby loch.\u00a0The guide explained: \u2018More than just a responsible approach, this also resulted in a superlative dish that showcased the full range of flavours one ingredient can provide.\u2019<\/p>\n

Down in the Lake District, Forest Side Hotel now has a Michelin star, a Michelin key<\/a>\u00a0(which is only for accommodation) and a green star. The Grasmere hotel\u2019s garden has 125 varieties of veg and herbs in its dishes and out of season it champions fermented ingredients.\u00a0<\/p>\n

Kitchen gardens feature across the restaurants on the list, but there\u2019s one addition that\u2019s an entire working farm, which happens to feature a restaurant. The Free Company in Balerno is set in a former milking shed and surrounded by more than 100 acres of farmland where you\u2019ll find\u00a0cattle, sheep and pigs alongside 10 acres of\u00a0beds and polytunnels used for vegetable growing. Produce is raised and grown using\u00a0organic, no-dig, regenerative practices in order to have as little negative impact on the planet as possible.\u00a0<\/p>\n
